How To make Oriental Meatballs Crunch
6 Ounces waterchestnuts, canned
2 eggs
1/4 Cup milk
1 Pound ground beef
1/2 Cup chopped onions
2 Tablespoons chili sauce
2 Tablespoons soy sauce, low sodium
to taste
1/4 Teaspoon pepper
3 Ounces Chow mein noodles :
crushed
Drain waterchestnuts; chop. Beat 1 egg and milk in bowl. Add ground beef, onion, sauces, pepper and waterchestnuts; mix well. Form into balls. Beat remaining egg with 2 tablespoons water. Dip meatballs in egg mixture; roll in crushed noodles. Fry in deep, hot fat until golden brown.
Recipe can be doubled.

Asian Chinese Chicken Meatballs Recipe
INGREDIENTS:
1 pound ground chicken
1 large egg white
1 tbsp. soy sauce
1 tbsp. cooking wine
1-2 chopped green onions
1 tsp. sugar
1/2 tsp. salt
1/4 tsp. white pepper
1 clove minced garlic
1 tsp. minced ginger
1/2 tbsp. sesame oil
*Put above ingredients in a food processor and pulse/process for a minute
to get the ingredients fully incorporated.
Refrigerate for 2-4 hours or overnight.
Form into meatballs..I make about a quarter size.
Put on lined baking sheet and bake at 400 degrees Farenheit for 15-20
minutes depending on the size of the meatballs.
Enjoy.

Lions head meatballs/狮子头 recipe for Chinese New Year
This dish is essentially Chinese style meatballs, first fried to brown the surface and to set its shape, then slowly cooked through by simmering in a soy sauce braising liquid. The braising liquid eventually gets turned into a sauce after by thickening with cornstarch.
It's perfect over rice, and the water chestnuts add a wonderful crunch to the meatballs. It gets its name because the meatballs are meant to resemble the head of the Chinese guardian lion, there is definitely no lion in this recipe at all
For the meatballs:
400g fatty minced pork
15g ginger, grated
15g spring onions, finely sliced
1 egg
40g Panko
30g shaoxing wine
30g soy sauce
15g oyster sauce
1/2 tsp white pepper
1/4 tsp five spice
1 tsp cornstarch
40g chicken stock
50g water chestnuts, diced
- combine all the ingredients together and slap the paste between your hands to knock out the air pockets between the meat, this prevents the meatballs from breaking apart
- shape into small bite sized balls and deep fry at 180C till nicely browned. It should only take 2-3 minutes
For the sauce,
1 tbsp cooking oil
2 garlic cloves
2 dried chillis(optional)
30g ginger, in large chunks
20g spring onions, white portion in large chunks
2 tbsp light soy sauce
2 tbsp dark soy sauce
1 tbsp oyster sauce
360g chicken stock
Sauté the garlic, ginger, spring onion, and dried chili in the oil on medium heat for about 2 minutes. Add in the liquid ingredients and bring to a boil. Then add in the fried meatballs and allow to simmer on low heat for 10 minutes. Turn off and add cornstarch slurry to thicken!

ASIAN-STYLE MEATBALLS recipe!
Perfect for your next cocktail party or holiday get-together, these delicious ASIAN-STYLE MEATBALLS get top marks for flavour and presentation.
I prepared this recipe for ASIAN-STYLE MEATBALLS for the fun-loving folks attending my classes at this year’s Christmas in November. The recipe yields a tasty treat I know your guests will enjoy.
Here’s why I love them so:
MEATBALLS – I’ve experimented making them with both beef and pork, but have now settled on a blend of both ground turkey and chicken; the combination makes these morsels of goodness more tender.
VEGETABLES – While in Jasper, I used grated carrot as one of the vegetables for this recipe, but have now swapped that out in favour of finely diced red pepper and water chestnuts. I like the pepper for its colour and flavour and the water chestnuts for their flavour and slight crunchiness. If you’re unable to track down water chestnuts, feel free to substitute finely diced celery or another vegetable more to your liking.
GARLIC AND GINGER – These two ingredients add robust flavour to the meatballs and I often add a touch more of each to the recipe to amp up the flavour profile. You can also add a bit of grated ginger to the sauce if you'd like, I sometimes do.
SOY SAUCE AND MISO PASTE – Using soy sauce and miso paste adds just the right amount of sauce to compliment the quantity of meat. Some guests mentioned they’d like it a bit saltier, but I caution you to add additional salt sparingly - too much salt in any dish is never appetizing.
GARNISH – Once the meatballs are fully cooked (to be sure, take one out of the oven at the 15-minute mark and check for doneness), add the flavourful sauce and toss to coat evenly. Then add my suggested combination of scallions chopped on an angle, chopped salted peanuts and sesame seeds as an attractive garnish. Transfer to an attractive bowl and serve straight away, remembering to present cocktail picks for ease of enjoyment.
