INGREDIENTS:
Butter 1/4 cup
Powder sugar 1/2 cup
Orange emulation 1/2 tsp
Mix until fluffy consistency
Mix well
All purpose flour 1 cup
Baking powder 1 tsp
Baking soda 1/4 tsp
Orange juice 3 tbsp
Dough form
Cherry on top
Place a stand & heat the pan for 5 mins on medium flame
After 5 mins place the tray
Cook it on medium low flame for 15-20 mins or bake in a preheated oven at 160c for 15-20 mins
NOTE: 1 CUP = 250 ML

SEVENTH HEAVEN
Here’s yet another example of the magic that can happen with the right ingredients. Looking at the photo, you might be thinking, “Hmmm, doesn’t look like much!” Only goes to prove that recipes need not be complicated; sometimes all you need is to put readily available ingredients to good use.
There's one point worth mentioning about baking powder and baking soda: these two ingredients contribute greatly to the success of this recipe. They react with both the wet ingredients and heat of the oven to give the biscuits lift and a rich golden colour. Make sure to check expiration dates before you begin the recipe just to make sure they’re both in top form.
RUBBED THE RIGHT WAY
Experienced biscuit makers know how important fat is to the recipe. Although some recipes call for shortening or margarine, we used butter. During the testing of the recipe, we found butter gave the biscuits a more pronounced colour and flavour. Although you can combine the butter in with the dry ingredients using a pastry cutter, we like the clean-hands-in-the-bowl method better. Rubbing the flour in with the butter by hand disperses it more evenly, giving the biscuits some serious flakiness!
ROLL AND FOLD
Pulling the dough together by hand is an easy step, as is the one-minute knead on a floured surface. The roll and fold step we show in the VIDEO and in the instructions down below is important. Rolling the dough out into a rectangle then folding it in thirds and rolling it out again is easy. Just remember to turn the dough 180 degrees before folding and repeating the steps a few more times. This also helps those biscuits climb a mile high when they bake.
CUT IT OUT
We used an inexpensive 2-inch circular cookie or biscuit cutter to cut the dough. This recipe will yield 12 biscuits, so you’ll need to cut a first round of shapes before gathering up the scraps to re-roll and cut more. We’ve provided a few links down below to purchase cookie / biscuit cutters.

Assorted Shortbread Cookies – To be honest, I’m not quite a cookie person, but butter cookies or shortbread are my favourite cookies. My sister made these and she gave me as a gift during the Lunar festival, I was like wow, they are amazingly delicious. I want to make them too. This recipe is pretty amazing with only 3 main ingredients, flour, butter and sugar, yes that is all. I added cranberries, pistachios and almonds in 3 different variations respectively, vanilla, matcha and chocolate. Best gift for any festivals. If you have tried “Walkers” Shortbread (I also have a box here to compare), I can tell you these homemade shortbread are as delicious as Walkers or even better. As I was editing this video, I was craving for it and kept taking from my kitchen. Yummy!

Ingredients:
226g [1 cup] unsalted butter, softened*
100g [½ cup] fine sugar
1 tsp vanilla extract
¼ tsp salt
*if you use salted butter, then just omit the salt
Vanilla:
113g [¾ cup + 3 tbsp] all-purpose flour
25g [¼ cup] dried cranberries, chopped
Matcha:
100g [¾ cup + 1 tbsp] all-purpose flour
10g [2 tbsp] matcha powder
25g [¼ cup] pistachios nuts, chopped
Chocolate:
95g [¾ cup + 1 tbsp] all-purpose flour
15g [2 tbsp] cocoa powder
25g [¼ cup] almond nuts, chopped
Instructions:
1. In a large mixing bowl, add softened butter and sugar. Mix until creamy, fluffy and pale.
2. Add vanilla extract and salt, mix until well combined.
3. Divide the batter evenly into 3. It’s recommended to use a weighing scale for better result.
Vanilla:
1. In the bowl of butter and sugar mixture, sift the flour into the bowl.
2. Press and fold with a spatula, as shown in the video, until it almost comes together.
3. Add in the chopped cranberries. Knead until it comes together.
4. Transfer the dough onto a parchment paper, one half side of the parchment paper, so that the other side can be used to cover the top.
5. Roll out the dough to about 6mm thick. Use a scraper to shape the sides neatly and evenly. Cover back the dough with the parchment paper.
6. Refrigerate for 1 hour or until it is hardened.
7. After 1 hour, cut the dough into the size or shape you desire. Place the cookie dough onto a baking pan.
8. Bake in preheated oven at 160°C/320°F for 20 minutes or until they are lightly brown.
9. Cool on a cooling rack.
Matcha:
1. In the bowl of butter and sugar mixture, sift the flour and matcha powder into the bowl.

3. Add in the chopped pistachio nuts. Knead until it comes together.

Ingredients:
- 100 grams of sugar (1/2 cup)
- 1/4 teaspoon salt
- orange peel
- 100 ml orange juice
- 80 ml vegetable oil
- 300 grams of flour (1+2/3 cups)
- 1 teaspoon baking powder
Additionally:
- 1 tablespoon of sugar
Bake in preheated 350°F (180°C) oven / 12 minutes.

No Oven Nankhatai Recipe | Simple Ingredients, Eggless | बिना ओवन के नानखटाई | Chef Sanjyot Keer
Full written recipe for Nankhatai
Prep time: 5-10 minutes
Cooking time: 15-20 minutes
Serves: 12-15 pieces
Ingredients:
SUGAR | शक्कर 1/2 CUP
GHEE | घी 1/2 CUP
CARDAMOM POWDER | इलायची पाउडर 1/2 TSP
BAKING SODA | बेकिंग सोडा 1/4 TSP
CURD | दही 1 TSP
REFINED FLOUR | मैदा 1 CUP
ALMOND & PISTACHIO | बादाम पिस्ता AS REQUIRED (SLIVERED)
Method:
Add the sugar into a mixer grinder jar & grind it into a fine powder to make powdered sugar.
Further sieve in the powdered sugar into a large bowl & add ghee along with cardamom powder, baking soda & curd, mix well using a whisk.
Once all the ingredients come together sieve in the refined flour & mix it well using a whisk or a spatula, use your hands for form the mixture into a dough but make sure you don’t have knead it.
Once the dough is formed take a small portion of it & form it into a roundel using your palms then gently press it, shape all the nankhatais similarly & place on a butter paper line baking tray with 2-3 inches of gap between each piece.
Add the slivered almonds & pisctachios from the top & bake in a 170C preheated oven for 12-14 minutes.
Once baked remove them out of the oven & let them cool down completely before serving.
If you don’t have an oven, you can use a kadhaai to bake these, add plenty of salt in the kadhaai, cover & let it preheat over high flame for 20 minutes.
Further take a plate & line it with butter paper & place the shaped nankhatais on the plate.
Once the kadhaai is preheated, place a steamer stand or a cookie cutter to give the plate some height & then place the plate on the stand.
Cover the kdhaai with a lid & bake the nankhatais over low flame for 20-25 minutes.
Once baked remove them from the kadhai & cool them down completely.
Your no oven perfectly baked nankhatais are ready, serve them with some kadak chai.
