~ * SALTED DARK CHOCOLATE ORANGE COOKIES RECIPE * ~
INGREDIENTS:
- 75g (5 tbsp) softened butter
- 50g (¼ cup) soft brown sugar
- 50g (¼ cup) caster sugar
- 1 large egg
- Zest of 1 orange
- 1 tsp vanilla extract or paste
- 140g (1 cup) plain flour
- ½ tsp bicarbonate of soda
- ½ tsp salt, plus extra for sprinkling on top (I used an orange-flavoured salt)
- 125g (4 oz) milk or dark chocolate chunks (I used Valrhona 64% dark chocolate)
INSTRUCTIONS:
1) Line 1-2 baking trays with greaseproof paper.
2) In a large bowl, beat together the butter and sugars until combined into a wet-sand-like mixture.
3) Add the egg, orange zest, and vanilla, beating thoroughly until well incorporated.
4) Tip the flour, bicarbonate of soda, and salt in and stir until you have a smooth dough.
5) Mix in the chocolate chunks until you have a stiff cookie dough.
6) Place the bowl of cookie dough into the fridge to rest and chill for at least 1 hour. Leaving it overnight or for a full 24 hours will produce the best results, but even a few hours will allow a gorgeous texture to develop.
7) About 20 minutes before you’re ready to bake, preheat your oven – 190°C / 170°C fan / 375°F / gas mark 5.
8) Once chilled, roll small chunks of the dough and space them out generously on your prepared trays. You should get 8-12 balls of dough from the mixture. (Feel free to add an extra chunk of chocolate on top to make them extra appealing once baked!)
9) Bake the dough balls in batches on their trays for 10-14 minutes until just golden brown at the edges, and looking dry on top. Obviously, the larger your cookie dough balls are, the longer they may take to bake.
10) Add a gentle sprinkling of salt on top of each cookie (and some extra orange zest if you like).
11) Cool them on their tray for 10 minutes before cooling completely on wire racks.
12) Enjoy!
BE A MAVERICK: why not add some chopped almonds or pistachios to the dough before baking?
These salted dark chocolate orange cookies will keep well in an airtight container for up to 4 days, but are best enjoyed fresh!

상큼한 느낌이 나는 오렌지와 레몬 모양의 쿠키를 만들었어요~
쿠키 반죽으로 과일 단면의 모양을 만들어 굳혀 슬라이스해서 구웠는데 손도 많이 가고 시간도 정말 많이 걸리더라구요~
반죽이 실온에서 쉽게 물러지기 때문에 빠르게 작업하고 중간 중간 냉동실과 냉장실에서 굳혀가며 작업을 해야 한답니다~
색감과 모양이 정말 오렌지와 레몬처럼 생겨서 그런지 싱그럽고 보기만 해도 기분이 좋아지는 쿠키 인 것 같아요~
자세히 보시면 안쪽의 색보다 테두리의 색을 조금 더 진하게 만들었는데 같은 색으로 만드는 것 보다 훨씬 예쁘더라구요~
반죽에 레몬, 오렌지 제스트를 넣어 정말 과일 향을 내도 좋을 것 같아요~^^

▶재료
무염버터 200g
슈가파우더 160g
소금 1g
달걀 55g
바닐라익스트랙 2g
박력분 200g
중력분 160g
아몬드가루 40g
베이킹파우더 1g
식용색소 (주황,노랑,화이트)
▶레시피
1. 무염버터를 부드럽게 풀고 슈가파우더와 소금을 넣고 살짝 뽀얗게 될 때까지 충분히 휘핑한다.
2. 달걀과 바닐라익스트랙을 넣고 섞고 박력분, 중력분, 아몬드가루, 베이킹파우더를 체 쳐 넣고 섞는다.
3. 반죽을 약 200g 정도 씩 다른 2개의 볼에 나눠 넣고 각각 색을 넣고 섞어 원형으로 말아 냉장실에서 2시간 정도 굳힌다.
3. 반죽을 약 80g 정도 씩 2개로 나눠 넣고 더 진하게 색을 낸 뒤 넓게 펴서 냉장실에 넣어둔다.
4. 남은 반죽에 화이트 식용색소를 넣고 섞어 색을 내고 넓게 펴서 냉장실에 넣어 둔다.
5. 원형으로 굳힌 반죽을 8등분 하고 냉동실에서 20분 정도 굳힌 뒤 흰색 반죽을 사이 사이 붙여 모양을 만들고 냉동실에서 20분 정도 굳힌다.
6. 진한 색의 반죽으로 (5)를 말고 냉동실에서 30분 정도 굳힌다.
7. 반죽을 얇게 썰어 오븐 팬에 올리고 160도 (170도 20분 예열) 오븐에서 15분 정도 굽고 식힌다.

Ingredients
☀100 gr butter
☀80 gr sugar
☀1 egg
☀3 tablespoons sour cream
☀3 tablespoons of oil
☀350-400 gr flour
☀1/2 teaspoon of salt
☀a pinch of salt
For filling:
☀1 orange
☀1 tablespoon of starch
☀150-200 gr sugar
Cooking:
1. Soft butter mix with sugar
2. Add sour cream, oil, egg, salt, flour, soda and knead the dough
3. Put the dough for 10 minutes in the refrigerator
4. Cook the orange for 4-7 minutes (so that it is not bitter)
5. Cut the orange, add starch, sugar and grind it with a blender
6. Cook the resulting mixture 5 minutes until thickened
7. Roll out the dough, as shown in the video, grease with orange filling on top. Wrap, slice and bake for 15-20 minutes at 180 degrees
