How To make Orange Banana Quickbread
6 oz Orange-juice concentrate
2 lg Very ripe bananas
2 Eggs
2 c Self-rising flour
2 1/2 ts Pumpkin-pie spice
1 ts Baking soda
4 tb Golden raisins
Thaw orange juice but don't dilute. Combine it with peeled bananas and eggs in an electric mixer bowl. Beat until fluffy. Stir flour, spice, and baking soda together and add to mixing bowl. Beat 1 minute. Stir in raisins. Spoon into a nonstick 5x9" loaf pan. Bake in a preheated 350 oven 30 to 35 minutes, until a knife inserted in the center comes out clean. {approximately 85 calories per slice} SOURCE: Slim Gourmet Sweets & Treats (pg. 81) -----

Orange Glazed Banana Bread
3/4 cup softened butter
8 ounces cream cheese, softened
1 1/2 cups sugar
2 eggs
4 ripe bananas, peeled and mashed
1/2 teaspoon vanilla
3 cups flour
1/2 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1 cup chopped walnuts
1 cup chopped pecans
Orange Glaze
1 cup confectioners (powdered) sugar
3-4 tablespoon fresh squeezed orange juice
1 teaspoon orange zest
In a large bowl cream together cream cheese, butter and sugar for about 2 minutes.
Add the eggs one at a time. Beat well after adding each egg. Add bananas and vanilla, beat to combine. Combine flour, baking soda, baking powder and salt in a medium bowl, whisk together. Gradually add the flour mixture to the butter mixture. Combine well. Fold in the chopped walnuts. Divide batter into 2 standard loaf pans. Add pecans and press lightly into the batter. Bake at 350 for 1 hour 15 minutes.
Glaze: Combine orange juice, zest and sugar. Whisk together.
Immediately pour glaze over bread as soon as it comes out of the oven. Let stand in pans for 10 minutes. Remove and cool on rack for 20 minutes before slicing. Enjoy
