How To make One Skillet: Life Of The Party Fajitas
1 ts Oil
2 Chicken breasts
pn Chili powder pn Cumin pn Oregano pn Salt pn Pepper 1 ts Garlic; minced
1/4 Red onion
1/2 Sweet pepper
dr Tabasco sauce 2 ts Lemon juice
2 Flour tortillas
Sour cream Salsa
GUACAMOLE:
1 Avocado
1 tb Lemon juice
1 ts Garlic; minced
ds Worcestershire sauce pn Cayenne Although this is a one-serving recipe, quantities can be increased. Do not multiply spice quantities - use your taste to get the desired flavours. Chicken breasts should be skinned and de-boned and cut into strips. The pinches of spices should be generous although taste is the guage. Guacamole :- Mash all ingredients together. Make ahead or make and let stand while preparing fajitas. 1. Heat oil in skillet over medium heat. Add chicken to skillet and
sprinkle seasonings. Stir fry for 4 minutes until cooked and slightly golden brown. Set aside and keep warm. Save 1/2 the chicken for later in the week. 2. Slice the vegetables and add to the skillet with the garlic. Stir fry 3
minutes until tender. 3. Return half the chicken to the skillet. Combine a drop of tabasco and
lemon juice and drizzle over the chicken. Heat through. 4. Microwave tortillas on high for 1 minute. Spoon fajita mixture onto
tortilla, roll up and serve garnished with sour cream, salsa and guacamole.

Marinate your chicken in a simple chicken fajitas marinade and cook this large batch fajitas recipe on the griddle with peppers, onions, and tomatoes.
The chicken thighs stay moist in the oven so you can prep other party foods. So delicious and so easy! Great budget griddle recipe for a crowd!

Sheet Pan Chicken Fajitas - Quick and Easy for a Crowd

INGREDIENTS
1 1/2 pounds (680 g) boneless skinless Chicken Breast or Chicken Thighs , sliced into thin strips
1/3 cup (80 ml) Grape Seed Oil or Vegetable Oil , for marinade
3 cloves (3 cloves) garlic , minced
1/2 teaspoon (3.75 ml) Kosher Salt or Sea Salt, or to taste
1 Tablespoon (10 ml) Worcestershire sauce
2 teaspoons (5 ml) Chili Powder
1/2 teaspoon (2.5 ml) ground Cumin
1/2 teaspoon (2.5 ml) Paprika
1/2 teaspoon (2.5 ml) Sugar
1 Tablespoon (15 ml) Lime Juice or Lemon Juice
1 (1 ) Onion , sliced
2 (2 ) bell peppers , sliced
1 (1 ) medium jalapeño pepper , seeded and chopped (optional)
Flour or corn tortillas for gluten free
shredded cheese , optional
sour cream , optional

The Recipe
Serves: 2
Ingredients:
1 tbsp coconut oil
1 red onion, sliced
1 red pepper, sliced
1 yellow pepper, sliced
2-3 chestnut mushrooms, sliced
2 garlic cloves, finely chopped
1 tsp EASY Fajita Spice Blend (see below ⬇ )
To Serve:
Tortilla wraps
Avocado
Sriracha
Fresh Coriander
2 wedges of fresh lime
Directions:
Heat your pan, then melt in the coconut oil
Fry the onions until slightly softened, then add in the peppers and cook for 3 or 4 minutes.
Add in the garlic and spices and cook for 30 seconds more.
Divide the mixture between the two wraps.
Top with the avocado, hot sauce, coriander and a squeeze of lime and dive in!
HOMEMADE FAJITA SEASONING MIX
1 tsp cumin
1 tsp garlic powder
1 tsp chilli (more or less to suit your taste)
1 tsp smoked paprika
1 tsp oregano
1/2 tsp black pepper
1/2 tsp salt
1/2 tsp sugar
Mix together and store in an airtight jar. 1 tsp of this mix is enough for 2 servings of fajitas.
