How To Make Chicken Fajitas
This recipe is for sheet pan chicken fajitas. Roasting the vegetables in the oven gets them tender, with a little char. The chicken is juicy, with the incredible flavor from the fajita seasoning dusted on top. Cooking the chicken fajitas and fajita vegetables in the hot 425* oven intensifies their flavor, gets dinner on the table fast and is super easy, so getting the tortillas warmed and making a quick guacamole doesn't make you wish for 6 extra hands.
Easy Chicken Fajitas Recipe Ingredients
1 lb skinless, boneless chicken thighs
1 medium yellow onion, sliced
2 peppers (green, yellow, red, orange), cored and sliced
2 cups cherry tomatoes, halved
Olive Oil
Kosher salt
Pepper
Fajita Seasoning Ingredients
1 tsp kosher salt
2 tsp garlic powder
2 tsp onion powder
1 tsp cumin
1 tsp chili powder
1 tsp black pepper
1 tsp smoked paprika
Easy Chicken Fajitas Recipe Directions
Begin by preheating your oven to 425 degrees. We're going to prepare the fajita vegetables first, because they'll need a little longer to cook than our chicken thighs. For these fajita vegetables, I'm using our families favorites, feel free to customize this step with your family's favorites. As long as they're cut to about the same size, the roasting time will be similar.
These recipe instructions are for sheet pan chicken fajitas, you can also make this on the stove top or grill. Sheet pan recipes are perfect for roasting meat and vegetables because the sides hold in the oil and any pan juices, and the low sides help the food roast without steaming. Roasting at the high heat of 425 degrees also concentrates their flavors, caramelizing the sugar and protein, so in a short amount of time, we get these super delicious results.
Liberally coat two sheet pans with olive oil, and spread the cut vegetables out in a single layer across one.
Peel and slice one medium yellow onion, into about 1 - 2 inch slices.
Core and slice 2 peppers into pieces 1/4 to 1/2 inch thick.
Slice about 2 cups of cherry tomatoes in half, and add cut side up to the oiled sheet pan.
Sprinkle the fajita vegetables with salt and pepper, and put into the oven. Check them for doneness at 15min.
Fajita Seasoning Instructions
Thoroughly mix all spices together. Taste and adjust the spice level for your personal preference.
Dust chicken thighs with the fajita seasoning, turning to coat all sides. Spread the chicken out on oiled sheet pan, and place into the oven. Set a 10 min timer. The chicken is done when the temperature reaches 165 degrees.
Easy Lemony Guacamole
This simple guacamole recipe is perfect for these chicken fajitas! Mash one ripe avocado in a bowl. Add 1/4 cup diced onion, minced garlic and the juice of one lemon into the mixture and stir. Add 1/4 tsp salt.

Easy Steak Fajitas
1 tbsp chili powder
1 tsp cumin
1 tsp paprika
1 tsp garlic powder
1 tsp onion powder
½ tsp dried oregano
salt and pepper
12oz steak, striploing or sirloin
1 red bell pepper, cut into strips
1 orange bell pepper, cut into strips
1 red onion, thinly sliced
8 tortillas
sour cream, salsa, avocado, cheddar
In a small bowl combine chili powder, cumin, paprika, garlic powder, onion powder, oregano, salt and pepper. Mix well. Season steak liberally with spice blend. Heat oil in a skillet over medium-high heat. When skillet is very hot, add steak and sear for 1-2 minutes per side (depending on how well done you like your steak). Remove the steak from the skillet and set it aside. In the same skillet, heat a little more oil and add peppers and onions. Season with remaining spice blend and cook for 4-5 minutes or until they are softened. Slice steak into strips and serve it with peppers and onions.
