Tuscan Chicken | The Ultimate Chicken Dinner?
Packed with flavour, my Tuscan Chicken in Creamy Sun Dried Tomato Sauce is the ultimate chicken dinner. Serve with pasta, potatoes or just a big hunk of bread to dip into that creamy sauce.

Ingredients:
4 chicken breasts
1 large egg
3 tbsp plain all-purpose flour (replace with gluten free flour blend if needed)
1/4 tsp salt
1/2 tsp freshly ground black pepper
1/2 tsp dried oregano
1/2 tsp dried thyme
1/2 tsp dried paprika
1/4 tsp garlic salt
3 tbsp olive oil
1 brown onion peeled and sliced
2 cloves garlic peeled and minced
1/2 tsp dried oregano
1 tsp paprika
1 cup (160g) sun dried tomatoes I like the bright red one from the deli counter
1 red bell pepper de-seeded and sliced
1 tbsp tomato puree (paste)
1/3 cup (90ml) white wine
1 cup (240ml) chicken stock (use bouillon for gluten free)
pinch of salt and pepper
1/3 cup (90ml) double (heavy) cream
1/2 packed cup (50g) parmesan cheese grated
3 packed cups (90g) fresh baby spinach
1 tbsp chopped parsley

One Pan Chicken Fricassée a French Chicken Stew
A one pan French chicken stew made with very basic ingredients. The term “Fricassée” means to fry and to break in pieces. The chicken is first browned in butter then braised in wine, chicken stock and slow cooked. It’s simple to make, and anything that only uses one pan is always a bonus. You can make it a day ahead as it will taste even better the following day. The flavours seems to develop even further. It’s easy to reheat, simply add a little water and use a saucepan with lid over very low heat. Chicken Fricassée is best served with rice, as it has a lot of sauce for the rice to absorb.
I strongly recommend that you buy a whole chicken and break it down yourself. If you don’t know how, see my video or get your butcher or poultry shop to do it for you. Make sure you keep the carcass for your stock. Making your own stock makes a world of difference to this dish.
Chicken Fricassée is a delicious meal that doesn’t require a lot of complicated ingredients and simple to make.

TUSCAN CHICKEN INGREDIENTS:
►2 large chicken breasts, halved (1 1/2 lbs)
►1 tsp salt, divided, or to taste
►1/2 tsp black pepper, divided
►1/2 tsp garlic powder
►2 Tbsp olive oil, divided
►1 Tbsp butter
►8 oz mushrooms, thickly sliced
►1/4 cup sun-dried tomatoes (packed), drained and chopped
►1/4 cup green onion, green parts, chopped
►3 garlic cloves, minced
►1 1/2 cups heavy whipping cream
►1/2 cup parmesan cheese, shredded
►2 cups fresh spinach

One Pot Chicken and Rice | Easy Chicken Rice Recipe | One Pan Chicken Rice | Chicken and Rice Casserole | Chicken Rice Bowl Recipe | One Pot Meals | Chicken Rice Recipe
Ingredients for One Pot Chicken Rice:
- Boneless Chicken pieces- 500 gms
- Basmati Rice- 2 US cups measure (375-400 gms)
For Marination:
- Turmeric Powder- 1/4 tsp
- Red Chilli Powder- 1.5 tsp
- Whisked Curd/ Yogurt- 4 tbsp
- Salt- 1 tsp
Whole Spices:
- Star Anise- 2
- Whole Black Peppercorns- 10-12
- Bay Leaves- 2
Spice Powders:
- Coriander Powder- 2.5 tsp
- Garam Masala Powder- 1 tsp
Other Ingredients:
- Onions sliced- 2 (150 gms)
- Green Chillies slit- 2-3
- Ginger Garlic paste- 2.5 tsp
- Coriander leaves, chopped- 4 tbsp +1 tbsp for garnish
- Mint leaves, chopped- 2-3 tbsp
- Salt- 1 tsp
- Refined Oil- 3- 4 tbsp
- Thick Coconut milk- 100 ml
- Water- 500 ml
Preparation:
- Marinate the chicken pieces with items mentioned and set aside for 30 mins.
- Also wash and soak the Basmati Rice for 30 mins.
- Slice the onions, slit the green chillies and chop the coriander & mint leaves.
- Prepare the coconut milk or use readymade.
Process:
- Heat 2 tbsp oil in a pan and place the marinated chicken pieces side by side. Sear the pieces on high to medium heat for 3 mins till browned. Flip on the other side and repeat the same for 3 mins on the other side. Remove and set aside on a plate.
- Add another tablespoon oil to the same pan and heat it.
- Add the whole spices, give a stir and add the sliced onions. Fry on medium heat for 5-6 mins till light brown in color.
- Add the ginger garlic paste and fry on low heat for 2 mins.
- Add the fried chicken pieces back to the pan and stir fry for a minute.
- Now add the coriander powder and Garam masala powder. Mix and fry on low heat for 2 mins till the chicken pieces are coated with the masala.
- Now add 100 ml coconut milk & 500 ml water and give a mix.
- Keep the heat on high and add slit green chillies, chopped coriander & mint leaves and 1 tsp salt.
- Give a stir and wait for the water to come to a boil.
- Add the drained rice to the boiling water and give a gentle stir. Cook the rice on medium heat for 5 mins.
- Again give a gentle stir, reduce the heat to low and cover & cook on low heat for 5 mins.
- Remove the lid, give a gentle stir and cover and cook on low heat for another 5 mins.
- Once done, garnish with chopped coriander leaves and let it rest for 15-20 mins before serving.

Chicken Stew with potato and vegetables seasoned with spices and herbs – an excellent and hearty family dinner or main course for festive table.

✅ Ingredients:
• boneless chicken thighs – 2 lb /900 g
• bulb onion – 9 oz /250 g
• carrot – 12 oz /350 g
• celery – 3 stalks
• fresh frozen peas – 4 oz /100 g
• frozen green beans – 4 oz /100 g
• chopped garlic – 4 cloves
• butter – 2 oz /50 g
• flour – 2 tbsp
• chicken broth or water – 4 cup /1 l
• potato – 17 oz /500 g
• italian seasoning blend – 1 tsp
• thyme – 3 sprigs
• 1 bay leaf
• chopped parsley – 2 tbsp
• salt – 1½ tsp
• ground black pepper- ½ tsp
• vegetable oil – 2 tbsp
✅ You will need:
• saucepan
• carving board
• bowl
????Preparation:
1. Heat 2 tbsp of vegetable oil in a saucepan and fry the chicken by two equal parts over high heat for 3-4 minutes.
2. Replace the chicken to a bowl and fry the bulb onion, garlic, carrot and celery over medium heat for 3-4 minutes.
3. Add the butter, wheat flour and stir.
4. Add the chicken, potato, thyme sprigs, Italian seasoning, bay leaf, salt, pepper, green peas and beans, chicken broth or water to the fried vegetables and stir.
5. Braise the chicken with a lid covered for 30 minutes over low heat.
6. Switch off the heat and sprinkle your chicken braised with potato and vegetables with the chopped parsley.
❗️Advices:
1. If you like a sour taste you can add cucumber pickles.
