Waffles: 1 Cup Oat Flour, 1 Cup Plain Kefir, and 3 Whole Eggs
Learn how to make an easy waffle mix and 3 delicious Eggo-inspired flavors! What is your favorite Eggo flavor? My go-to is cinnamon brown sugar.I use a cheap mini waffle iron from Target, but you can make regular sized waffles using your waffle iron.
Basic Waffle Mix: 4 servings
2 cups rolled oats
2 tbsp ground flax
1 tbsp sugar
2 tsp baking powder
1/2 tsp salt
1. Grind oats into a flour
2. Mix ingredients in a container of your choice.
Cinnamon Brown Sugar Waffles: 1 serving (2 mini waffles)
1/2 cup waffle mix
1/8 tsp cinnamon
Pinch of nutmeg (optional)
1/3 cup nondairy milk
1/2 tsp vanilla extract
1 tsp neutral cooking oil
1. Mix dry ingredients
2. Add wet ingredients and mix. Let mixture sit for 2-3 minutes.
3. Cook on preheated waffle iron according to waffle iron instructions.
Chocolate Chip Waffles: 1 serving (2 mini waffles)

1 tsp chocolate chips, roughly chopped
1/3 cup nondairy milk
1 tsp vanilla extract
