I started with a basic jog in the park. I used to jog for three kilometers every day or one hour, whichever was earlier. After four days, my feet started to hurt so bad that I couldn’t jog. My feet hurt really bad and I stopped.

Grace's Chocolate Chip Skillet Cookie
My sweet daughter actually developed this recipe based on her experience with making low carb chocolate chip cookies. While I helped her a little, it was her idea to combine some key ingredients from her favorite recipes. The result was an ultra-rich, decadent cookie!
The recipe below is a little different from the recipe in the video since we decided that adding 1 tsp of molasses is completely unnecessary.
Trust me when I say that NO ONE knew there was coconut in this. Even the pickiest eaters preferred this over the traditional skillet cookie.
1 cup of almond flour
1/2 cup oat fiber (or coconut flour)
1/2 cup unsweetened coconut
1 tsp baking powder
1/2 tsp baking soda
1 tsp salt
12 ounces butter, softened
3/4 cup equivalent granulated sweetener
1/2 tsp molasses (optional)
1 tablespoon unflavored gelatin
2 tsp vanilla extract
1 tsp cinnamon
2 large eggs
5 ounces chopped chocolate
1/2 cup chopped pecans (opt)
Mix all ingredients. Cookie dough will be very thick. Smooth into a skillet or baking dish that has been greased with coconut oil or butter. Bake at 350 for 15-20 minutes. Enjoy warm with whipped heavy cream.
