Easy Oatmeal Pancakes
Check out this unique spin on traditional pancakes - just add everything to a blender to combine, then pour right on to a hot griddle. Makes 4 servings: 2 cups rolled oats, 1 1/4 cups milk of choice, 1 ripe banana, 1 1/2 tsp baking powder, 1 egg. optional: may add honey or other sweetener to taste (depending on the ripeness of your banana, you may not need it). May also add cinnamon and vanilla for extra flavor (1/2 tsp each). Top with fresh fruit, nut butter, and/or your favorite syrup. Refrigerate what you don't finish and reheat in a toaster for an easy breakfast option later in the week!

• 1¼ cups all-purpose flour
• 1/2 cup quick oats
• 2 tablespoons sugar
• 2 teaspoons baking powder
• 1 teaspoon baking soda
• 1/2 teaspoon salt
• 1¼ cups buttermilk
• 2 large eggs
• 1/4 cup salted butter melted

Easy OATMEAL PANCAKES Recipe ( 4 small/medium pancakes) :
- 60g INSTANT oats or 2 Sachets of Instant Oatmeal
- 50g Greek Yogurt (3 tbsp)
- 1 small/medium Egg
- 1 tsp Vanilla Extract
- 1 tsp Baking Powder
- 60g Milk (4 tbsp)
- A few drops of 0 cal Sweetner of your choice! OR 1 tbsp of regular sugar if prefered.
- Pinch of Salt
Serve with a drizzle of Maple Syrup!
If your batter seems too loose, set it aside for about three minutes, and the oats will absorb some of the liquid. Don't forget about your batter though LOL!
Calories for all 4 pancakes ( using a 0 calorie sweetner) is 320 calories.
With a drizzle of maple syrup (around 2 tbsp) 420 calories.
