1 cup soft shortening 2 cups granulated sugar 2 egg -- unbeaten 4 Tablespoons grated orange rind 3 Tablespoons Gerber orange-apricot juice 1 teaspoon nutmeg 1 teaspoon salt 4 teaspoons baking powder 2 cups sifted flour 2 cups Gerber oatmeal cereal Preheat oven to 375. Cream shortening and sugar together. Add eggs, and beat well. Stir in grated orange rind. Sift together nutmeg, salt, baking powder and flour. Add alternately with juice. Mix in cereal until well blended. Drop dough from teaspoon onto greased cookie sheet. Bake 12-15 minutes. Yield approximately 5 dozen cookies.

Ingredients: 1¼ cups (160g) Oat flour 3/4 cup (70g) Quick/Rolled oats 1 teaspoon Baking powder 1/4 teaspoon Salt 1/3 cup (72g) Coconut oil, melted 1 teaspoon Vanilla extract 1/3 cup (67g) Sugar 3 tablespoon Milk of choice 1/4 cup Walnuts, chopped *optional
Directions: 1. Line a baking sheet with parchment paper and set aside. Preheat oven to 180°C (350°F). 2. In a large bowl mix oat flour, rolled oats, baking powder, salt and sugar. 3. Add coconut oil, vanilla extract, milk and mix until combined. 4. Add chopped nuts and mix until combined (this step is optional) 5. Shape the dough into 14-16 small balls and arrange them on prepared sheet. Flatten the cookies. 6. Bake for 13-15 minutes. 7. Allow to cool on the tray for 5-10 minutes, then transfer to a wire rack and allow to cool completely.
