How To make Nutty Cheese Ball
1/4 lb Bleu Cheese
1/4 lb Grated Cheddar
3 oz Cream Cheese
1 sm Grated Onion
1 ts Worcestershire Sauce
1/8 lb Chopped Walnuts Or Pecans
1/8 lb Chopped Walnuts Or Pecans
Blend together well the cheese, onion and Worcestershire sauce. Add 1/8 pound of chopped nuts and blend well again. Form into a large ball and refrigerate overnight. Bring to room temperature one hour before serving. Roll in 1/8 pound of chopped nuts. Serve with crackers or corn chips. From: Syd's Cookbook.

Each recipe makes about 10 balls
Ingredients:
Cacao Almond Date Balls:
200g (7oz) pitted madjool dates
85g (3oz) almonds
2 tablespoons raw cacao
1 tablespoon coconut oil
1 tablespoon natural peanut butter
Pinch salt
Cashew Tahini Date Balls:
200g (7oz) pitted madjool dates
85g (3oz) cashew nuts
1 tablespoon coconut oil
1 tablespoon tahini
3 tablespoons desiccated/shredded coconut
Pinch salt
Walnuts Cranberries Date Balls:
200g (7oz) pitted madjool dates
85g (3oz) walnuts
50g (1.76 oz) dried cranberries
3 tablespoons desiccated/shredded coconut
1 tablespoon coconut oil
Directions:
1. Process nuts for 10-15 seconds, until crumbly.
2. Add all the ingredients and process until sticky, about 1 minute.
3. Squash the mixture and roll between your hands to form balls.
• Store the balls in the fridge up to a week

Making Emmentaler Style (Swiss Cheese) At Home
This Swiss type cheese is known for its delicious nutty flavour and holes.
So what makes the holes? The holes or eyes develop with the addition of a bacteria called Propionic shermanii which feeds on lactose in the milk and creates CO₂, which creates the eyes. The larger the cheese, the bigger the eyes. If you have larger equipment and a big press, I recommend that you double this recipe for a better result.
When made commercially this cheese is made in 60-80 kg (132 -- 176 lbs.) wheels, which aids the uniformity of the eye formation. This recipe will make a 900 gm (2lbs) wheel with much smaller eyes.

Rennet Chymax Plus IMCU 200;
Propionic Shermanii;

Nutella/Biscoff Nut ball cookies recipe

Ingredients:
- 150g butter
- 70g icing sugar
- 1 tsp vanilla extract
- 1 tbs milk
- 160g all purpose flour
- 50g corn flour
- 20g cocoa powder
- a pinch of salt
- nuts just enough for coating
- Nutella
- Biscoff
.
Instructions:
1. Preheat oven at 180C & line the baking pan with baking paper, set aside.
2.In a bowl, cream butter & sugar together. Then add in vanilla extract & milk. Mix well.
3.After that, sift in flour, corn flour, salt & cocoa powder. Mix until combine.
4.Take 1 tbs of the dough & form it into a ball. Coat with white egg & tossed it in chopped nuts & place it on the lined baking pan. Repeat until all the dough is finish.
5.Use your thumb or small spoon to make indentation in center of each ball.
6.Bake it for 30-40 minutes or until the nuts turning olden brown (depend on your oven). Once baked, remove from the oven & press down the centers again. Let it cool completely on the pan.
7.Once completely cool, pipe in any filling that you want. Store it in airtight container.
