Easy Nicoise Salad

My favorite salad, colorful and delicious. Make this for dinner tonight!
Ingredients:
Lettuce - your choice - I like butter lettuce
Small Yukon Gold potatoes, boiled fork tender, cut in bite size pieces
Green beans, steamed crisp tender
Baby carrots, boiled fork tender
Hard boiled eggs, quartered
Cherry tomatoes, cut in half
Canned tuna, drained
Kalamata olives
Capers
Salt and Pepper to taste
Instructions:
Fill a large salad bowl with lettuce. Layer each ingredient on top of lettuce. Salt and pepper to taste. Add your favorite salad dressing. My favorite dressing is olive oil and fresh squeezed lemon juice

Kickstart Your Healthy New Year with this Tasty Tuna Niçoise Salad Recipe: Quick and Easy Meal Prep!
Tuna steaks, new potatoes, eggs and olives combine to make an elegant but filling salad. Tuna is an excellent source of vitamin B12, and an essential vitamin needed to make DNA. This is the perfect recipe to kick start some healthy- eating for the new year..
Ingredients
2 x 400g Super frozen tuna steaks
500g Small new potatoes, halved
200g Green beans, trimmed and halved
½ Red onion, thinly sliced
1 tsp Red wine vinegar
½ tsp Sugar
½ tsp Salt
2 Medium free-range eggs
1 tbsp Extra-virgin olive oil
4 Tomatoes, chopped
4 Ortiz anchovy fillets in oil, drained and chopped
2 tbsp Capers
50g Kalamata olives, pitted
2 tbsp Basil, roughly chopped
1 tbsp Parsley, roughly chopped
Handful rocket leaves
1 tbsp Red wine vinegar
1 tsp Wholegrain mustard
¼ tsp Caster sugar
4 tbsp Extra-virgin olive oil
Method
1. Bring a pan of water to the boil with a pinch of salt. Add the potatoes and cook for 10 minutes. Add the green beans and cook for a further 3 minutes until tender. Drain and refresh under cold water, then drain well, and set aside.
2. Meanwhile, combine the onion slices, vinegar, sugar, salt and a pinch of pepper in a small bowl. Add 1 tbsp water and set aside for 15 minutes to quick-pickle. Drain well and put in the fridge.Put the eggs in a saucepan of gently boiling water and simmer for 7 minutes. Drain and plunge into cold water. Peel and cut in half
3. Heat a frying pan over a high heat. Rub the tuna with the olive oil and season. Add to the pan and cook for 1-2 minutes on each side, depending on the size of the steaks. Remove from the pan and rest for 5 minutes, then cut into thin slices, cover and chill until needed.
4. For the dressing, whisk together red wine vinegar, wholegrain mustard, sugar and oil in a small bowl. In a separate bowl, combine the potatoes, beans, tomatoes, anchovies, caper, olives, herbs and rocket leaves. Add a couple of tablespoons of the dressing and stir well. To assemble, transfer the salad to a big plate or platter and arrange the tuna slices on top. Drizzle over the remaining dressing just before serving.

This Tune salad is part of a range of Mediterranean food that is being made by French locals all along the Mediterranean coast. For the purists, the authentic salad nicoise should only be made with fresh produce that are in season and does not contain boiled vegetable such as potatoes nor green beans.
in this video we take a look at how to make the authentic salad nicoise from scratch. its an easy recipe that can be enjoyed by the all family and is also very healthy with lots of raw food and fresh vegetables.
Salad Nicoise, ingredient for 4 servings:
2 boiled eggs
The equivalent of 1 diced capsicum
6 lettuce leaves (butter lettuce)
3 tomatoes (sliced)
Half a cup of diced cucumber
1 small can of tuna chunks in olive oil
A handful of black olives
8 anchovies
3 spring onions ( sliced)
A handful of broad bean ( if in season)
1 small jar of marinated artichokes heart
salt, pepper and lemon juice (optional)
Half a cup of olive oil
A few fresh basil leaves to decorate
