How To make Quiche Nicoise
1/4 c Onion
2 tb Olive oil
2 lb Tomatoes
- peeled, seeded and diced 2 Garlic cloves; minced
Herbes de Provence: - (Equal parts - marjoram, oregano, thyme) 3 Eggs
8 Anchovy filets, minced
3 tb Olive oil
3 tb Tomato paste
3 tb Minced parsley
1 ts Paprika
1 pn Cayenne pepper
Prepared tart shell Nicoise olives, pitted Grated Parmesan cheese Olive oil SAUTE ONION IN OLIVE OIL until softened. Add garlic and saute another 2 minutes. Add tomatoes, 1/2 teaspoon herbes de Provence. Cover and simmer 10 minutes. Uncover and simmer 10 minutes more. Remove from heat and add the eggs beaten with anchovies, oil, tomato paste, parsley, paprika and cayenne. Pour into prepared shell and top with olives, grated cheese and little oil.

ingredients:
1 head of Lettuce large, washed and dried
1 cup fresh green beans trimmed, blanched
3 or 4 tomatoes quartered
tin of salmon
2 cups French potato salad recipe follows
4 hard-boiled eggs halved lengthwise
2-3 flat anchovy filets packed in oil
1/2 cup black Nicoise-type olives
3 or 4 Tbs. capers
Olive oil for drizzling
Salt and pepper to taste
French Potato Salad
5-6 white potatoes cooked to fork tender
1-2 Tb olive oil
1 Tb white wine vinegar
Salt and pepper to taste
Flat leaf parsley chopped
Vinaigrette (makes about 1/2 cup)
1-2 Tb red wine vinegar or fresh lemon juice
¼ tsp mustard
1/2 cup olive oil
Salt and pepper to taste

750g new potatoes, halved
Low-calorie cooking spray
400g green beans, trimmed
2 lemons
10g chives, finely chopped
4 medium eggs
4 medium tomatoes, quartered
2 x 160g tins of tuna in spring water, drained and flaked
Preheat your oven to 220°C/fan 200°C/gas 7. Spray the new potatoes with cooking spray and toss to coat. Roast for 35-40 minutes, turning halfway, until golden.
Meanwhile, fill a medium saucepan with boiling water and place on a high heat. Cook the green beans for 5 minutes until tender. Use tongs to remove from the water and run under cold water until cold. Add the eggs to the same pan of water and cook for 7 minutes until softly boiled. Remove and run the eggs under cold water for 1 minute. Carefully peel and cut in half.
To make a quick dressing, mix together the juice of the lemon, most of the chopped chives and some salt and black pepper in a large mixing bowl. Gently toss in the green beans, tomatoes and tuna.
Arrange the roasted potatoes, dressed green beans, tomatoes, flaked tuna and halved eggs in a serving dish. Sprinkle over the remaining chives and top with more black pepper.
