How To make Nectarine Yogurt Muffins
2 cups All-purpose flour
1/2 cup Brown sugar
packed
2 teaspoons Baking powder
1/2 teaspoon Baking soda
1/2 teaspoon Salt
8 ounces Vanilla yogurt
1/4 cup Butter or margarine :
melted
1 Egg
1 Nectarine chopped
peeled peach 1/4 cup Almonds :
sliced
Recipe by: Pillsbury, Healthy Baking Preheat oven to 400 degrees; grease the bottoms only of the muffin cups or line with paper baking cups. In a large bowl, combine the flour, brown sugar, baking powder, baking soda and salt. In a small bowl, combine the yogurt, margarine and egg; blend well. Add to the dry ingredients; stir just until the dry ingredients are moistened. The batter will be very thick. Stir in the nectarine. Fill the muffin cups 3/4 full. Sprinkle the almonds over the batter. Bake for 15 to 22 minutes, or until golden brown and a toothpick inserted in the center comes out clean. Cool for 1 minute; remove from the pan. Serve warm. Delicious Nectarine Cake Recipe | Tasty and Easy Fruit Cake
This Nectarine Cake Recipe filled with fresh Nectarines is super delicious. This moist and flavorful Fruit Cake tastes so good and is perfect for afternoon treats with a cup of coffee or tea. This recipe explains how to bake a cake and the Nectarine Cake filling and ingredients. Its taste is so like a peach cake. You can use either fresh, frozen, or canned nectarines. You’ll love this Nectarine Cake Recipe.
Instructions:
► Slice 625 grams / 5 nectarines (560 grams / 3 cups without seeds)
► 200 grams / 1 ⅓ cups of wheat flour
► 1 ½ teaspoons of baking powder
► ½ teaspoon of salt
► Sift them
► Mix them
► In a separate bowl:
► Mix 220 grams / 1 cup of butter at room temperature for 2 minutes
► Add 150 grams / ¾ cup of granulated sugar
► Mix them for 2 minutes
► Add 2 eggs
► Add 120 grams / ½ cup of plain yogurt
► Add 1 tablespoon of vanilla
► Mix for more 2 minutes
► Add the flour mixture and mix for more 2 minutes
► Add 3/4th of the sliced nectarines (leave 1/4th for the top of cake)
► Fold them with spatula
► Spread butter on a pan (size: 8-inch / 20-cm)
► Place a parchment paper on the bottom of the pan
► Transfer the batter into the pan
► Place the remainder of the sliced nectarines on top of the batter
► Bake it in a preheated oven at 175°C / 350°F for 80 minutes
► Let the cake to cool down
► Sprinkle 1 tablespoon of powdered sugar on top of the cake

Ingredients
2 cups all-purpose flour
½ teaspoon salt
2 teaspoons baking powder
1 cup white sugar + 2 teaspoons for topping
2 eggs
½ cup milk
⅓ cup of vegetable oil
2 cups of fresh blueberries
1 teaspoon vanilla extract
Directions
Add flour, 1 cup of sugar, salt, and baking powder to a large bowl. Whisk it all together.
In a separate bowl add oil, milk, eggs, and vanilla extract. Mix it with a fork until combined.
Add your liquid mixture to your dry mixture and stir until combined.
Coat your blueberries with flour, and fold them into your batter mixture.
Line a muffin tin with cupcake liners and fill each liner with your muffin batter until almost full.
Sprinkle your 2 teaspoons of sugar over the top of your muffins.
Bake in a 375° oven for 25 minutes or until done. Insert toothpick into the center of the muffin and if it comes out clean your muffins are done.
Remove muffins from tin and cool on a wire rack.
