How To make Navarattan Curry

yogurt

heavy cream

green peas

cup
raisins

almonds, blanched
DRY
MASALA :
1/2
teaspoon
cardamom, ground
1/2
teaspoon
coriander powder
1/2
teaspoon
ginger, ground
1/2
teaspoon
red chili powder
1/2
teaspoon
turmeric
Directions:
Note: For the random vegetables, can use, broccoli, green peppers, carrots, cauliflower, green beans, etc.
Boil vegetables (except onions and peas). Drain and set aside. Melt butter and saute onions and garlic. Add tomatoes, yogurt, and the dry masala, and simmer for 5 minutes. Add vegetables and simmer for another 5 minutes, then add water. Cover and simmer for 10 minutes. Add cream and peas, stirring gently. Before serving, top with raisins and almonds.

Navratan Korma or Noborotno is a delicious rich creamy curry recipe made with mixed vegetables and dry fruits. It's made with 9 ingredients that's why it's called Navratan. People also cook non vegetarian version of Navratan, in this video we are presenting the Vegetarian version.

12. 12. Charmagaz 2 tbsp
13. 13. Poppy seeds 2 tbsp
14. 14. Milk 150 ml
15. 15. White Oil 2 tbsp
16. 16. Ghee 1 tbsp
17. 17. Raisins 10 pcs
18. 18. Bay leaves 2 pcs
19. 19. Red chilies 2 pcs

Cooking Procedure:
Step 1: Prepare nuts and seeds paste by grinding cashew nuts, Charmagaz and poppy seeds.
Step 2: Boil all the vegetables and keep aside.
Step 3: Mild fry Cashew nuts and raisins and keep aside.
Step 4: Fry Paneer cubes until light brown.
Step 5: Add all the spices and saute for few minutes. then add tomato paste.
Step 6: Add boiled vegetables and add all the spice masala.
Step 7: Cover and boil for 5 mins.

Navratna Korma
You’ll find it in a restaurant menu in London, in a wedding feast in Chennai, or a weekend dinner in New Delhi. That’s how popular this rich, semi-sweet vegetable dish is. Navratna Korma features a delectable assortment of vegetables and fruits in an intense gravy burgeoning with cashew paste and cream. This gravy gets its subtle sweetness from pineapple cubes and pineapple syrup, which give it a mild, tongue-tickling tang as well. Enjoy it fresh with naan or parathas.

Cooking Time: 15 minutes
Makes 4 servings
Ingredients
2 tbsp ghee
1/2 cup grated onions
2 tsp ginger-garlic (adrak-lehsun) paste
1/2 tsp turmeric powder (haldi)
2 tsp coriander (dhania) powder
1 1/2 tsp chilli powder
1/2 cup blanched and chopped tomatoes
1/4 cup broken cashewnuts (kaju)
1 1/2 cups finely chopped mixed vegetables (carrots , I196 and green peas)
1/2 cup fried paneer (cottagte cheese) cubes
salt to taste
1/2 cup milk dissolved in 2 tsp cornflour
2 tbsp fresh cream
1/4 cup canned pineapple pieces
a pinch of sugar
2 tbsp canned pineapple syrup
a pinch of garam masala
For The Garnish
1 tbsp fresh cream
a few canned pineapple pieces
Method
1. Heat the ghee in a kadhai, add the onions and sauté on a medium flame for 1 to 2 minutes.
2. Add the ginger-garlic paste and sauté on a medium lame for 1 minute.
3. Add the coriander powder, chilli powder, mix well and cook on a medium flame for 1 minute.
4. Add the tomatoes and cook on a medium flame for 1 minute.
5. Add the cashewnuts and 2 tbsp of water and cook on a medium flame for 1 minute.
6. Add the mixed vegetables, paneer, mix well and cook no a medium flame for 1 to 2 minutes, while stirring occasionally.
7. Add the salt, milk-cornflour mixture and fresh cream and cook on a medium flame for 1 to 2 minutes, while stirring continuously.
8. Add the pineapple, sugar, canned pineapple syrup and garam masala and cook on a medium flame for 1 to 2 minutes, while stirring occasionally.
9. Serve hot garnished with fresh cream and pineapple pieces.
