Explore the green chile war between Colorado and New Mexico
For the past few years New Mexico hasn't been too happy with Colorado over the green chile pepper. In Pueblo, town officials have made the pepper a town identifier as more farmers in southern Colorado rely on the crop for their livelihood. But can Colorado lay claim to this green rush? Today I’m going to share with you how to make the best chile colorado and fry bread! This is one of our favorite, the fry bread is just soooo delicious, tbh this is one of the first recipes I learned because my husband loves it, and I was blessed to have his mom to teach me how to make it, it never gets old.

if you DONT have an instant pot, no problem? boil water in a pot, add meat, onion, garlic, let it come to boil again, skim the foam formed on top of pot, reduce heat to medium, add salt, bouillon, and black perpper, cover and let it cook for 2-3 hours or until meat is nice and tender ????
spice level will depend on the chiles you use
Ingredients: 7-8 fry breads
For the meat:
2.5 lbs chuck tender roast
1/2 garlic head
1/2 onion
Salt i used 5 tsp
1 tbsp beef bouillon
1 tbsp black pepper
4 cups water
for the sauce:
2 bay leaves
3 tbsp oil
3 tbsp flour
10 New Mexico chile pods
chile árbol (optional)
3 garlic cloves
2 1/2 cups of broth
2 tsp New Mexico chile powder
1 tsp oregano
1/2 tsp whole cumin
For the dough:
4 1/2 cups APF
2 tbsp shortening
2 cups warm milk
4 1/2 tsp baking powder
1 tsp salt
1 serving of love ????

HATCH CHILE: 2021 Harvest in Hatch, New Mexico/Chile Capital of the World/Red or Green/Ristra Making
If you've been following @marcyinspired1442, you know that many of my recipes include Hatch chile. That's because I'm a native New Mexican and chile is a staple in our diets. Depending on where you live, you may have seen the label, Hatch chile. Hatch is a tiny farming community in southern New Mexico, about 40 miles northwest of Las Cruces, that is known for having the most flavorful chile. In fact, it's called the Chile Capital of the World. Tens of thousands of people make an annual journey to Hatch during the months of August and September because that's peak harvest season. That's when they load up on enough Hatch chile to get them through the year. You can buy it in 40 pound sacks and have it roasted and even peeled on the spot. After that, you just freeze it and use it throughout the year in all your favorite dishes. In this video I take you along as I get my fix.
If you can't make the trip in person, don't worry. You can have Hatch chile delivered to you. I recommend Grajeda Farm's Hatch Chile Market. That's where I get my chile. They don't have a website, but you can find them on Facebook and message or call them with your order. Here's a link:

New Mexican Red Chile Sauce Recipe:
2 Tablespoons flour
2 Tablespoons canola oil or vegetable oil
3 Tablespoons red Chile powder
1 ½ cups water
¼-teaspoon garlic powder or 1 clove fresh, diced finely
¼-teaspoon salt
1/8 or pinch of dried oregano
Heat oil in medium size saucepan on medium to low heat. After about a minute, add flour and stir constantly so it does not burn. Cook for approximately one minute and then add red chile powder, continue stirring constantly. The consistency will be crumbly. After another minute, begin to whisk in cold water slowly. Once the sauce begins to boil, add garlic, oregano and salt. Continue cooking for 20 minutes on low heat. Use sauce right away for enchiladas, chile beans, or store in the refrigerator for up to 7 days.
