NASHVILLE HOT CHICKEN BISCUITS
Eating Nashville Hot Chicken is kind of like tattoos...you get one and you want another another and another. Despite the pain you just keep going back. Anyway you eat Nashville Hot Chicken is an experience. You can dictate the level of heat you desire, but this recipe is the ultimate in hot with 6 heaping tablespoons of cayenne pepper, thrown in with a bit of chili powder, paprika, garlic powder and brown sugar for a delicious and heated sauce glaze. Typically this famous dish is served with only white bread and pickle slices, but this recipe of hot chicken is served between two fluffy homemade buttermilk biscuits . Homemade Butter milk biscuits just like grandma used to make. These old-fashioned lard biscuits are incredibly easy to make! With only 6 ingredients and a few simple steps you’ll get a golden brown top crust and flaky center. Easy! Delicious! Definitely an experience in spicy! Enjoy!
Homemade Old Fashioned Lard Buttermilk Biscuits recipe and video:
Shopping list:
FOR THE CHICKEN:
• Boneless chicken breasts
• 1 tablespoon freshly ground black pepper
• 2 tablespoons
• 2 large eggs
• 1 cup buttermilk or whole milk
• 2 tablespoons vinegar-based hot sauce (such as Tabasco or Texas Pete)
• 1 cup all-purpose flour
• Vegetable or Canola oil (for frying) RESERVE 1 CUP OF HOT OIL FOR THE SAUCE
• 6 tablespoons cayenne pepper
• 2 tablespoons dark brown sugar
• 1 teaspoon chili powder
• 1 teaspoon garlic powder
• 1 teaspoon paprika
• Sliced dill pickles (for serving)
• Can of buttermilk biscuits, or
• Homemade biscuits (the link to my video on how to make these biscuits is listed above)
Instructions.
• Mix chicken with black pepper and 2 tablespoons of Kosher salt in a large bowl. Cover and chill at least 3 hours to overnight. After brining, cover with plastic wrap and pound the breasts to about ½ inch even thickness.
Make your biscuits first and set aside while you start your chicken, cover to keep warm until your chicken is ready.
• Whisk eggs, milk or buttermilk, and hot sauce in a large bowl. Whisk flour and 2 teaspoons of black pepper in another large bowl.
• Fill a Dutch oven or deep fryer with oil. Heat over medium-high heat until thermometer registers 350°. Working with 1 piece at a time, dredge in flour mixture, shaking off excess, then dip in egg/milk wash, letting excess drip back into bowl. Dredge again in flour mixture and place on a baking sheet.
• Working in batches and returning oil to 350° between batches, fry chicken, turning occasionally, until skin is deep golden brown and crisp and an instant-read thermometer inserted into thickest part of pieces registers 160° for white meat and 165° for dark, 10-12 minutes depending on the size and type of chicken you are frying. Transfer to a clean wire rack set inside a baking sheet. Let oil cool slightly.
• In a bowl, whisk together cayenne, brown sugar, chili powder, garlic powder, and paprika. Carefully whisk in 1 cup frying oil. Dredge fried chicken into bowl of sauce to thoroughly coat
• Serve between your biscuits and dill pickle slices.

3 Cups All Purpose Flour
3 TBS Granulated Sugar
4 tsp Baking Powder
1/2 tsp Salt
1/2 tsp Cream of Tartar
1 Cup Milk
1 Egg
Sausage Gravy:
1 LB. Ground Country Sausage
3/4 Stick Salted Butter
2/3 Cup All Purpose Flour
1 tsp Just a Sprinkle All Purpose Seasoning
3 1/2 Cups Heavy Whipping Cream
1 Cup Milk
1 TBS Parsley

The husband and wife team behind Biscuit Love in Nashville, Tennessee, are giving the pillowy bread we all know and love an entirely new purpose. Karl and Sarah Worley fulfilled their dream of opening up a food truck in 2012, and once word got out about their phenomenal biscuits, their dedicated fan base of hungry Southerners grew and grew. The irresistible biscuit dough demonstrates versatility as the bread for their world famous hot chicken sandwich called Princess, the dough for their delectable lemon blueberry doughnuts — or, as they call them, Bonuts — and it even serves as a bun for their spectacular version of a cheeseburger dubbed Wash Park.
