How To make Nachos Schulz
15 oz Chili beans in chili gravy
9 T Picante sauce
15 oz Corn tortilla chips
4 c Cheddar; grated
1 Avocado
1 T Lemon juice
1 1/2 c Sour cream
1 T Onion; grated
4 Scallion; with top, chopped
1 c Olive, black pitted; chopped
1 Tomato; chopped
Preheat the oven to 400 F. Mash the beans with one-half cup of the picante until well mixed. Grease two 9" x 13" baking pans. Place half the chips in each pan, then spoon the bean mixture over them. Sprinkle the grated cheese on top. Bake for about minutes or until the cheese is melted and beans are bubbling. Meanwhile, peel, pit and mash the avocado, then mix it with the lemon juice, 1/2 cup of the sour cream, the grated onion, and 1 tablespoon of the picante. Garnish the nachos with the guacamole you just made, the remainder of the sour cream, scallions, tomato, and olives. ---*The Cereal Murders* Diane Mott Davidson

Recipe for the Nachos:
**Combine corn, pinto beans, chunks of avocado, tomatoes, and slices of onions in a large bowl. Add in diced garlic and add ground cumin to flavor. Add this one top of your chips.
**Slowly melt Horizon Organics shredded or string cheese chunks over low heat with milk. Add flour to desired consistency. Pour over mixture.
**Puree black beans and scoop into Ziplock bag. Cut a corner off of the bag and pipe onto your nachos after you have perfected drawing Snoopy!

Putting the Finishing Touches on our Dessert Nachos
Amazing Cheesy Kale Chips
This awesome raw vegan recipe is a classic. Kale chips are a great snack and source of nutrients. The non-dairy cheese adds that texture and cheese taste we all love.
CHEESY KALE CHIPS
4-5 heads of Kale, remove stems but keep kale leaves whole as much as possible, place in huge bowl
2 cups apple cider vinegar
1.5 cups olive oil
1 tablespoon Celtic Sea Salt
2 Tablespoons coarse black pepper
lots of minced garlic (around 20 cloves)
mix in bowl
make cheese and then add that also and mix in bowl
CHEESE
1 cup cashews
1/4 to 1 cup pine nuts
3 cloves garlic
1 red bell pepper
1 lemon squeezed
pinch of Celtic sea salt
1/4 cup Apple cider vinegar (up to 1/2 cup)
1/2 cup Nutritional Yeast
1/4 cup water
Spread onto dehydrator sheets and dehydrate at 120F 45C
After 4-6 hours when tops get hard, flip over onto mesh sheets so bottoms can dry also
