How To make Nachos Schulz
15 oz Chili beans in chili gravy
9 T Picante sauce
15 oz Corn tortilla chips
4 c Cheddar; grated
1 Avocado
1 T Lemon juice
1 1/2 c Sour cream
1 T Onion; grated
4 Scallion; with top, chopped
1 c Olive, black pitted; chopped
1 Tomato; chopped
Preheat the oven to 400 F. Mash the beans with one-half cup of the picante until well mixed. Grease two 9" x 13" baking pans. Place half the chips in each pan, then spoon the bean mixture over them. Sprinkle the grated cheese on top. Bake for about minutes or until the cheese is melted and beans are bubbling. Meanwhile, peel, pit and mash the avocado, then mix it with the lemon juice, 1/2 cup of the sour cream, the grated onion, and 1 tablespoon of the picante. Garnish the nachos with the guacamole you just made, the remainder of the sour cream, scallions, tomato, and olives. ---*The Cereal Murders* Diane Mott Davidson

Frijoles Charros | Mexican Cowboy Beans

????Slow Cooked Bean Recipe
4 cups dry Pinto or Peruvian beans
1 onion wedge
3 garlic cloves
1-2 bay leaves
14 cups water + more if needed
1 tsp salt OR NO Salt for Frijoles Charros Recipe *Be careful not to over salt the beans for your Frijoles Charros.
Separate beans, remove any rocks or debris.
Rinse until clean.
In a large pot add clean beans, bay leaves, onion and garlic plus 10 cups of water (save the rest for later)
Cover and cook over a low medium flame.
Check periodically to ensure they have enough water.
Add the remaining water as needed + more to preference.
After 2 hours of cooking they should be tender and almost done cooking.
Add salt, mix.
When beans are completely tender to the bite or touch they are ready. Turn off flame.
????FRIJOLES CHARROS RECIPE (Mexican Cowboy Beans)
1 cup diced onion
1 tsp minced garlic
1-1/2 to 2 tsp minced serrano pepper
1/4 cup chopped cilantro
1-1/2 cup diced tomatoes
3/4 cup deli slices cut into squares
1 cup soy chorizo (About 5.80 oz)
1/2 TBSP vegan vegetable bouillon paste mixed with 1 cup water= vegan broth
3 cups cooked whole beans +add more to taste
2 cups bean broth +add more to taste
1 tbsp vegetable oil I used avocado oil + more if needed.
You’ll need a large pot over a medium flame, add vegetable oil.
Lightly fry deli slices, once browned add onion, serrano pepper, garlic. Cook until onion becomes translucent.
Add soy chorizo cook for 4 minutes.
Add tomatoes, cook down until they become tender.
Add vegan bouillon paste water mixture.
Simmer for 7 minutes.
Add whole beans and broth.
Simmer for 10 minutes.
Add fresh cilantro towards the end.
Turn off flame.
●As always we all have different preferences be sure to adjust any of the ingredients to your taste.
Enjoy warm by themselves or as a side dish.
*I’ve made Vegan nachos out of Frijoles Charros, they were a hit!

Amazing Cheesy Kale Chips
This awesome raw vegan recipe is a classic. Kale chips are a great snack and source of nutrients. The non-dairy cheese adds that texture and cheese taste we all love.
CHEESY KALE CHIPS
4-5 heads of Kale, remove stems but keep kale leaves whole as much as possible, place in huge bowl
2 cups apple cider vinegar
1.5 cups olive oil
1 tablespoon Celtic Sea Salt
2 Tablespoons coarse black pepper
lots of minced garlic (around 20 cloves)
mix in bowl
make cheese and then add that also and mix in bowl
CHEESE
1 cup cashews
1/4 to 1 cup pine nuts
3 cloves garlic
1 red bell pepper
1 lemon squeezed
pinch of Celtic sea salt
1/4 cup Apple cider vinegar (up to 1/2 cup)
1/2 cup Nutritional Yeast
1/4 cup water
Spread onto dehydrator sheets and dehydrate at 120F 45C
After 4-6 hours when tops get hard, flip over onto mesh sheets so bottoms can dry also
