How To make Mom's Nut and Date Candy
1 c Nuts, finely chopped
-(walnuts, pecans, etc.) 1 c Dates, finely chopped
2 c Sugar, granulated
1/2 c Water (up to 3/4 cup)
1 T Karo
Boil a syrup of the sugar, water and Karo; stop as or before it reaches the soft ball stage. Let cool. Beat in the dates until they "disintegrate," then the nuts. Wet a dish towel in cold water. Spoon the candy along the middle of the towel in piles. Fold towel over; roll it, pressing firmly constantly. Leave to cool and harden. Slice approximately 1/4-inch pieces. Might want to roll slices in coconut, chopped nuts, etc. (Mom never did, tho'.)

How to Make Divinity Candy recipe
Recipe:
2 2/3 cup sugar
2/3 cup white corn syrup
1/2 cup water
2 egg whites
1 tsp vanilla
Beat egg whites until stiff peaks form. Combine sugar, syrup, and water in heavy saucepan. Wipe down the sides to avoid sugar Crystal's. Cook syrup to 270° (hard ball, almost hard crack stage). Slowly pour the syrup into the egg whites while blending. Add vanilla and nuts if desired (or place nuts on individual candies after they are scooped). Blend until thickened and candy holds its shape. Scoop pieces on to parchment paper or greased pan. Avoid making divinity on a humid day but to avoid extra moisture, you can take a tablespoon of water from the half cup (if that really helps).

Have you ever made Date candies? We went over to California today to the Date Farm. After having a Date Shake which is delicious, we brought home a box of dates so I could make a whole bunch of other wonderful things from dates. Chocolate covered dates with pecans inside. So Yummy.
Date Candy Recipe
25 Dates
25 whole or half Pecans
Milk Chocolate Melts
Line cookie sheet with wax paper or parchment paper. Put water in double boiler with Chocolate melts in top of double boiler, heat until melted. In the mean time slice dates and remove pits. Fill date with pecan and squeeze back together. When chocolate is melted, dip date filled with pecan into chocolate. Coat all of date, shake excess chocolate and return to wax paper on cookie sheet. Let dry completely. Store in airtight container. Enjoy.
