3 bls (1.361 kg) ground beef (I used 85 / 15 fat to meat ratio)
1 medium to large onion finely chopped
5 cloves garlic minced
6 Tbsp (40 g) chili powder (I used McCormick Brand)
3 tsp (7 g) smoked paprika
3 tsp (8 g) garlic powder
3 tsp (8 g) onion powder
3 tsp (7 g) ground cumin
3 Tbsp (49.5 g) tomato paste
7 cups (1.65 L) low sodium beef broth
1 chipotle pepper in Adobo sauce
2 Tbsp Adobo sauce from can of chipotle peppers
2 - 15 oz cans pinto beans (drained and rinsed)
salt and pepper to taste
*For corn starch slurry*
4 Tbsp (35 g) corn starch
4 Tbsp (60 ml) cold water
INSTRUCTIONS
- In a preheated on a medium high heat 6 .5 qt pot add 3 tbsp oil and ground beef
- Add salt and pepper to taste, cook ground beef for 5 to 8 minutes
-Now add garlic and onion, combine and continue to cook for 3 to 5 minutes
- Next add and combine all dry seasonings and spices to cooked ground beef
- Now add tomato paste, combine and cook for a minute or two
- Next add beef broth, stir and mix well
- Add chopped chipotle pepper, adobo sauce and bring to a boil
- Cover pot with a lid, lower the heat and gently simmer for 1 hour stirring through out
- After and hour add cornstarch slurry to thicken chili
- Add drained and rinsed pinto beans combine and simmer for and additional 15 minutes then serve

Ingredients:
1 pound ground beef
1 medium onion - diced
2 green bell peppers diced
1/2 cup celery
1-2 tablespoons chili powder
2 cans kidney beans
1 quart tomato sauce
salt and pepper to taste
Brown the ground beef along with the peppers and onions.
Add in the chili powder and stir well to mix, cook an additional 3-4 minutes.
In large sauce pan add the beans and tomato sauce.
Mix in the ground beef mixture. Mix well and taste for salt and pepper.
Cooking for 15-30 minutes.

Today we’re gonna answer that question.
Now enchiladas are a favorite in our kitchen but it’s always a war between how they’re gonna get made.
My Mom is going to make her Tex-Mex style enchiladas using Wolf Brand Chili and Longhorn Cheddar, while I’m gonna whip up my enchiladas with a more traditional red sauce and topped with queso fresco.

Ingredients:
- 1 pound ground beef
- 1 onion, chopped
- 1 green bell pepper, chopped
- 3 cloves garlic, minced
- 1 tablespoon chili powder
- 1 teaspoon smoked paprika
- 1 teaspoon ancho chili powder
- 1/2 teaspoon cayenne pepper
- 2 teaspoon salt
- 1 teaspoon black pepper
- 1 tablespoon cocoa powder
- 1 (15-ounce) can kidney beans, rinsed and drained
- 1 (15-ounce) can pinto beans, rinsed and drained
- 1 (15-ounce) can fire roasted tomatoes
- 1 (15 ounce) can crushed tomato
- 4 cup vegetable stock
Instructions:
- In a large pot, brown the ground beef over medium heat. Drain off any excess grease.
- Add the onion, bell pepper, jalapeño pepper (if using), and garlic to the pot. Cook until the vegetables are softened, about 5 minutes.
- Stir in the chili powder, cumin, oregano, salt, and black pepper. Cook for 1 minute more.
- Add the kidney beans, pinto beans, diced tomatoes, crushed tomato, and beef broth to the pot. Bring to a boil, then reduce heat and simmer for 30 minutes, or until the chili has thickened.
- Serve hot with your favorite toppings, such as shredded cheese, sour cream, or chopped fresh cilantro.
Tips:
- For a spicier chili, add more jalapeño pepper or more cayenne pepper.
- For a thicker chili, mash some of the beans against the side of the pot with a fork.
- For a vegetarian chili, omit the ground beef and add an extra can of beans.
