How To make Modified Chili Con Carne
1 cup pinto beans
or kidney beans
3 cups water
1 tablespoon vegetable oil
2 cups onion :
chopped
1 green bell pepper seeded, chopped
1 pound lean ground beef
2 cups tomato :
chopped
6 ounces unsalted tomato paste
3/4 cup water
2 tablespoons chili powder
1 tablespoon vinegar
2 tablespoons garlic clove finely minced
1 teaspoon oregano
1 teaspoon cumin
1/4 teaspoon black pepper :
freshly ground
1 bay leaf
Place beans and 3 cups water in saucepan. Bring to a boil and cook for 2 minut es. Do not drain. Set aside for 1 hour. Return beans to heat, adding water t o cover if necessary. Simmer for one hour or until beans are tender. Drain an d set aside . Heat the oil in a large, deep skillet or Dutch oven. Add onion and green peppe r. Cook until onion is transparent. Add meat and brown. Pour off all fat. A dd beans and remaining ingredients. Bring to a boil, reduce heat and simmer 1 1/2 hours, stirring occasionally. Remove bay leaf before serving. Note: You may substitute 3 cups no-salt-added canned kidney beans instead of d ried beans and water. Also, unsalted canned tomatoes can be substituted for the fresh tomatoes.

Chili Recipe:
3 pounds of ground beef
2 red bell pepper blistered and diced
4 Fresno chilis
4 guajillo chilis
2 ancho chilis
2 tbsp chipotle in adobo
1 large yellow onion diced
3 medium carrots diced
8 oz canned tomatoes
4 cups beef broth
1 12 oz can of IPA or stout for a richer broth
1 5-6 oz can tomato paste
1 tbsp Worcestershire sauce
1 1/2 tsp whole cumin
1 tsp whole coriander seeds
1/2 or 1 tbsp chili powder depending on spice tolerance
1 whole cinnamon stick
2 tsp smoked paprika
2 tsp onion powder
2 tsp garlic powder
1 15 oz can kidney beans
1 15 oz can of pinto beans
1 tbsp brown sugar
3 tsp kosher salt
2 tsp black pepper
Toppings:
Fried tortilla chips
Thinly sliced green onions
Grated cheddar cheese
Pickled red onions (optional)
Sour cream
Cast iron cornbread recipe:
3/4 cup cornmeal
1/4 cup polenta
1 cup all-purpose flour
1/3 cup caster sugar
1 tsp kosher salt
2 tsp baking powder
1 tsp baking soda
1 1/4 cups full-fat buttermilk
6 tbsp unsalted butter (2 for cast iron pan before adding batter)
1/3 cup avocado oil
2 whole eggs
Serve with honey, butter, and sea salt
Pickled red onions
1 1/2 large red onions
1 1/2 cups lemon or lime juice
1/4 cup red wine vinegar
2 tsp salt

Texas Red Chili - AKA Bowl of Red - AKA Chili Con Carne
The timeframe and origins of chili are debatable such as many things in history. Did it start in the US or did it come from Spain?
In 17th century there is an old Southwestern Native American legend that a chili recipe was put on paper by a beautiful nun, Sister Mary of Agreda of Spain.
In the 18th century there are records in San Fernando de Bar, now know as the city of San Antonio, of a spicy “Spanish” stew that is similar to chili.
In the 19th century things became more clear. Chili was cooked on chuckwagons where Cowboy cooks didn't carry perishable items, it was made popular in Tex prisons, it went national when Texas sets up a stand at the1893 Columbian Exposition in Chicago.
My favorite account is the women of San Antonio known as the “Chili Queens” selling this they called chili that was makde with dried chilis and beef in the Military Plaza Mercado. From the July 1927 issue of Frontier Times. In this article, Frank H. Bushick, San Antonio Commissioner of Taxation, The chili stand and chili queens are peculiarities, or unique institutions, of the Alamo City. They started away back there when the Spanish army camped on the plaza. They were started to feed the soldiers. Every class of people in every station of life patronized them in the old days. Some were attracted by the novelty of it, some by the cheapness. A big plate of chili and beans, with a tortilla on the side, cost a dime.
One thing that is not debatable is the original chili started off as Chili Con Carne (chili with meat) and it started off in the Southwest. Chili was about the meat and the flavors from the chilis. There were no fillers such as beans, noodles or rice.
State Dish of Texas - 1977 - RESOLVED by the House of Representatives of the State of Texas, the Senate concurring, That the 65th Legislature in recognition of the fact that the only real bowl of red is that prepared by Texans, hereby proclaims chili as the State Dish of Texas.
