in. (2.54 cm) of water to simmer in a wide skillet. Turn off the heat and wait 30 seconds. Set bowl of chocolate in pan of water. Stir chocolate mixture until melted and smooth. Or, melt in a microwave on LOW (30%) for about 2.5 minutes. Remove chocolate from heat and let cool until a small dab on your upper lip feels slightly cool, about 85 F (~30 C). 2.) choc. mixture. The mousse should seem very soft. Scrape immediately into mold, glasses, or onto dessert that it will enhance. The mousse sets quickly and should not be manipulated too much. "Normally, to use it properly as a flavoring, we require maximum taste with minimum liquid. Rather than use coffee extract or flavoring from a bottle, I use one of the premium brands of instant coffee or espresso powder (but NOT freeze dried crystals). Two brands that I like are Medaglio d'Oro and Cafe Salvador. "If (like me) you are too much of a coffee snob to ever dream of actually drinking instant coffee, you are probably thinking of using strong brewed coffee or real espresso. I recommend against this. [It] will deliver too much liquid and not enough flavor. 3-Ingredient Mocha Mousse
We tried a new spring dessert and the results were incredible ????
Makes 24
INGREDIENTS
½ can (120ml) NESCAFÉ Iced Coffee Latte
2 slabs (85g each) NESTLÉ Aero Dark Chocolate
¾ cup cream
Serving suggestion:
Strawberries
Coffee granules
NESCAFÉ Iced Coffee Latte
METHOD
1. Heat the NESCAFÉ Iced Coffee Latte in the microwave for 1 minute. Ensure that the liquid does not boil.
2. Roughly break the NESTLÉ Aero Dark Chocolate into a heatproof bowl. Pour the heated latté over the chocolate. Leave to melt for half a minute, then stir with a whisk until all of the chocolate is melted and the mixture is smooth and well-combined. Allow to cool slightly. *Chef’s Tip: Ensure the chocolate is completely melted to prevent a gritty mousse-texture.
3. Whisk the cream until medium-stiff peaks form.
4. Using a spatula, carefully fold the cream, a third at a time, through the melted chocolate until just combined. Chef’s Tip: Ensure not to overmix the mousse.
5. Divide the mocha mousse mixture into glasses. Refrigerate the mousse for at least an hour.
6. Garnish each mocha mousse with quartered strawberries and some coffee granules. Serve immediately and ENJOY along with NESCAFÉ Iced Coffee Latte served over ice!
