Ingredients
INGREDIENTS (serves 4)
5 large eggs - separated
3oz / 90g caster sugar
7oz / 200g dark chocolate - broken into small pieces
2 tablespoons strong hot coffee
5floz / 150ml whipping cream - lightly whipped
Method
Step #1 - Whip egg whites with 2oz/60g sugar until you get soft peaks. Beat egg yolks with 1oz/30g sugar until pale & fluffy.
Step #2 - Melt chocolate in a bowl over a pan of simmering water.
Stir in HOT coffee & egg yolks. Mix well.
Step #3 - Gently fold the egg whites & the whipped cream into the chocolate mix. Pour into ramekins & chill in fridge for 3 hours or overnight.

1 3/4 cups heavy cream, chilled
3 large egg whites
1/4 cup sugar
Bittersweet chocolate, shaved, for garnish
Steps:
1. Temper chocolate, stirring until melted. Turn off the heat and let stand.
2. Beat heavy cream until it forms soft peaks. Set aside.
3. Whip egg whites with a hand mixer until soft peaks form, gradually adding in sugar.
4. Using a whisk, fold the tempered chocolate into the egg whites. Once fully incorporated, fold in the whipped cream. Transfer to a baking dish if desired, cover and refrigerate until set (about 1 hour).
5. Serve with shaved chocolate and enjoy!

Mocha Mousse is a velvety cloud of rich chocolate and coffee. Each bite melts in your mouth and is guaranteed to satisfy all your chocolate cravings.
Ingredients
CREAM CHEESE MIXTURE
4 oz. Cream Cheese, softened
2 tbsp. Sour Cream
2 tbsp. Butter(unsalted), softened
1/2 tsp. Vanilla Extract
3 tbsp. Granulated Stevia (white sugar, optional)
1 1/2 tsp. Instant Coffee Powder
2 tbsp. Cocoa Powder
WHIPPED CREAM MIXTURE
1 Cup Heavy Whipping Cream
1/2 Vanilla Extract
TIPS
The Granulated Stevia we use in this recipe is twice as sweet as sugar----One teaspoon is as sweet as two teaspoon of sugar. If using different sugar -free sweetener, adjust the amount accordingly.
PROCEDURE
In a mixing bowl, beat the cream cheese, sour cream, and butter using the electric mixer until smooth.
Then blend in the vanilla extract, sweetener, coffee and cocoa powder until incorporated. Set aside (put in the fridge)
In a separate bowl, beat the whipping cream until soft peaks form. Add vanilla extract beat again until stiff peaks form.
Fold the whipped cream into the cream cheese mixture. Fold until the whipped cream is evenly incorporated.
Transfer the mousse into serving dish and refrigerate until set before serving (about 3 hours). ENJOY!
