Hot Chewy Cheese Puff Recipe (Argentinian Chipa) - Pai's Kitchen!
This recipe is courtesy of Natalia Machado, my lovely Argentinian co-host on the TV show One World Kitchen! This is the recipe for a traditional Argentinian cheese bread that Natalia serves at her restaurant as a gluten-free option for the bread basket. They're amazingly cheesy and addictive! Think hot, chewy, cheesy mochi with a crunchy crust..that's exactly what these are like. The chewiness comes from the tapioca starch which you can find at any Asian grocery stores. The recipe is almost exactly as Natalia gave me, with slight modifications I made to better suit a home kitchen :)

1 Minute microwave CAKE POPS -THE EASIEST WAY TO MAKE CAKE POPS
Recipe:
- 60g Butter (1/2 stick)
- 60g Sugar (5 tbsp)
- 120g Milk (1/2 cup)
- 100g All Purpose Flour (2/3 cup)
- 1/4 tsp Salt
- 1 tsp Baking Powder
Divide the batter in half and to one half add 1 1/2 tbsp Cocoa powder and 3 tbsp of milk.

Ingredients:
Prepare Chocolate Ganache:
-Cooking chocolate grated 200g
-Cream 100g (room temperature)
Prepare Chocolate Custard Cream:
-Whipping cream chilled 1 Cup
-Condensed milk 250ml
-Milk powder ¼ Cup
-Doodh (Milk) 600ml
-Vanilla essence 1 tsp
-Cocoa powder ¼ Cup
-Cornflour 4 tbs
Assembling:
-Peek freans Choco Lava Biscuits as required
-Doodh (Milk) as required
-Chocolate ganache
-Choco Lava Biscuits
Directions:
Prepare Chocolate Ganache:
-In a bowl,add chocolate,cream & microwave for a minute,mix well & set aside.
Prepare Chocolate Custard Cream:
-In mixing machine bowl,add whipping cream,whisk until soft peaks form & set aside.
-In a wok,add condensed milk & cook on low flame for 4-5 minutes.
-Add milk powder & mix until well combined.
-Add milk & mix well.
-Add vanilla essence,cocoa powder,cornflour,whsik well & cook on medium flame until it thickens (4-5 minutes).
-Transfer to a bowl & let it cool completely while whisking then cover its surface with cling film & refrigerate until chilled.
-Remove cling film,add half quantity of whipped cream,fold gently until combined with the help of spatula & transfer to a piping bag.
-In remaining half quantity of whipped cream,add half quantity of chocolate ganache,mix gently & transfer to a piping bag.
Assembling:
-Dip choco lava biscuits in milk & assemble in a serving dish.
-Add a layer of prepared chocolate custard cream & chocolate ganache.
-Add a layer of soaked choco lava biscuits & chocolate custard cream.
-Add a layer of chocolate cream,garnish with chocolate ganache & choco lava biscuits.
-Refrigerate until serve!

-Karahi mein condensed milk dal dein aur halki ancch per 4-5 minutes kliya paka lein.
-Milk powder dal ker ache tarhan mix ker lein.
-Doodh dal ker ache tarhan mix ker lein.
-Vanilla essence,cocoa powder & cornflour dal ker ache tarhan whisk karein aur darmiyani ancch per garha ho janay tak paka lein (4-5 minutes).
-Bowl mein nikal lein aur whisk kertay hoye thanda ker lein phir surface ko cling film sa cover ker lein aur thanda ho janay tak refrigerate ker lein.
-Cling film ko remove ker lein aur whipped cream ki half quantity ko dal ker spatula ki madad sa gently fold ker lein & piping bag mein transfer ker lein.
-Whipped cream ki remaining quantity mein chocolate ganache ki half quality dal ker gently mix karein & piping bag mein transfer ker lein.
Assembling:
-Choco lava biscuits ko doodh mein dip karein aur serving dish mein assemble ker lein.
-Tayyar chocolate custard cream & chocolate ganache ki layer laga lein.
-Soaked choco lava biscuits & chocolate custard cream ki layer laga lein.
-Chocolate cream ki layer laga lein,chocolate ganache & choco lava biscuits sa garnish ker lein.
-Serve kernay tak refrigerate ker lein.

6 Types of Cookies
Ingredients for Cookie Dough:
Unsalted butter 1 cup
Brown sugar ¾ cup
Caster sugar ½ cup
Eggs 2
Vanilla essence 1 tsp
Corn flour 1 tbsp
Flour 2 ¾ cup
Baking powder 1 tsp
Baking soda 1 tsp
Salt ½ tsp
For The Chocolate Chip Walnut:
Chocolate chips 2 cups
Chopped walnuts 1 cup
For Cowboy Cookies:
Chocolate chips 2 cups
Oats 1 cup
Chopped walnuts ¾ cup
Coconut flakes ¾ cup
For The Oatmeal Raisin:
Oats 1 ½ cups
Raisins 2 cups
For Dark Chocolate Chunk:
Cocoa powder ½ cup
Dark chocolate chunks 2 cups
For The Chocolate Peanut Butter:
Cocoa powder ½ cup
Peanut butter 1 tbsp
Chocolate chips 4 tbsp
Method:
Beat butter, brown sugar and caster sugar until smooth. Add in the eggs and vanilla essence and beat until just combined. Add in flour, corn flour, baking powder, baking soda and salt. Mix until just combined. Divide into smaller bowls and fold in desired add-ins.
Place onto silicon lined baking sheets using a scoop. Bake at 180 degrees C for 11-14 minutes, until tops are golden brown. Let cool on a wire rack completely.
For a chocolate cookie dough base, reduce flour to 1 1/2 cups and add in 1/2 cup cocoa powder.

Iced Mocha
Ingredients:
Milk 150ml
Chocolate chopped 25 gm
Ice as required
Coffee 35ml
Cream whipped 30ml
Cocoa powder or cinnamon a pinch
Method:
Pour 50ml of the milk into a pan and add the chocolate. Mix well until melted, and then leave to cool. Half-fill a large, tall glass with ice, then pour in the cooled chocolate milk and the remaining 100ml milk and stir to combine. Top up with more ice, and then slowly pour in the coffee. Finish with a dollop of whipped cream and a dusting of cocoa powder or cinnamon – or both.

Ginger Cordial
Ingredients:
Ginger, thickly sliced 200gm
Lemons, peeled and juiced 2 large
Caster sugar 75gm
Light brown sugar 100gm
Ice as required
Soda water 1 liter
Mint sprigs to serve
Method:
Put the ginger in a saucepan over a low heat with the lemon peel, caster and brown sugars and 500ml water and stir until the sugars have dissolved. Simmer for 15-20 mins, or until reduced and syrupy. Remove from the heat and leave to cool completely. Strain the syrup into a jug through a sieve lined with muslin. Pour the ginger syrup into a large jug. Tip in the lemon juice, fill with ice and top up with the soda water. Serve garnished with a few mint sprigs.
