Pork Loin Tostadas Recipe
The meat
2 lb lean pork loin boneless roast
1 tsp salt, kosher :
1/2 tsp ground black pepper :
1 tsp onion powder :
1/2 tsp garlic powder :
2 TBSP oil :
Sweet tomato salsa
1 lb tomatoes, ripe
1/4 medium white onion
2 garlic cloves
1/2 tsp dry Mexican oregano :
Salt to taste (1 tsp salt kosher)
1 TBSP granulated sugar or monk fruit alternative:
1 cup water
Blended beans
3 cups cooked beans
2 garlic cloves
1/4 medium white onion
2 cups bean broth
4 TBSP of olive oil

Veggie ceviche tostadas✨
For the Ceviche:▪️1/2 Cup Jicama, diced small▪️1/4 Cup Red Onion, diced small▪️1/2 of a Serrano Pepper, diced small ▪️1 Avocado, diced small▪️1/2 Cup Red Bell Pepper, diced small▪️1/2 Cup Frozen Corn, thawed▪️1/4 Cup Cilantro, minced▪️

For the Dressing:▪️3 Limes▪️3 Tbsp Olive Oil▪️1/4 tsp Salt▪️1/4 tsp Pepper▪️1 Clove Garlic, grated▪️

For the Tostadas: ▪️2 Tbsp Avocado Oil▪️6 Corn Tortillas▪️Kosher Salt▪️2 Tbsp Cotija Cheese▪️

????Vegan Modification: Leave out the cheese
.
1️⃣ Preheat oven to 400°F (convection if you have it) and drizzle 2 Tbsp avocado oil on a baking sheet
2️⃣ Coat tortillas in oil on both sides, sprinkle with some salt, and bake for 7 minutes on the first side, flip and bake for 3-4 more minutes until golden brown and crispy (if you are not using convection you may have to cook a bit longer)
3️⃣ Mix together the ingredients for the dressing and set aside
4️⃣ Place ingredients for the ceviche in a bowl and pour the dressing on top; mix to evenly coat the veggies and serve on top of the tostadas with 1 tsp cotija cheese sprinkled on each one - enjoy!

2 tsp light chili powder
1 tsp onion powder

1 Tbsp unsalted butter

Very few plates at a Mexican restaurant grab your attention like a plate of sizzling fajitas. First you hear it, then you smell it…then you wish you ordered that platón instead of the chicken enchiladas.
In this video we’re cooking up Restaurant Style Fajitas. I decided to grab some outside skirts for maximum tenderness, but beware when shopping for them. This particular cut goes fast in stores as restaurants demand such large quantities of it. Either side of skirt will have you eating good either way.
And here is the weekly Pro Tip: Don’t over cook them! Common sense, I know, but you would be surprised how easy these can get away from you. Both the scorching plancha and the sizzling platter can keep the fajitas cooking even more and dry out what would otherwise be delicious and tender meat. Shoot for a medium or even medium-rare before you plate it on skillet to serve.
I always say that BBQ is simple, and although we aren’t on a live fire today the principles still apply. A scorching hot heat source, a great cut of beef and a little technique is all it takes for a dinner that will blow away any one who is lucky enough to chow down.

These Chalupas are way up on my list of favorites, they are easy, unique, hearty and super delicious! theyvare a whole meal in one. whether filled with ground beef, shredded chicken, pork, beans they will amaze you. This was a favorite growing up, my mom fried them crispy, smeared beans on them and topped them with our favorite toppings, whether the tortilla was fried flat or folded like a boat it was always a winner. I love seasoning my ground beef with onions, diced tomatoes, roasted and diced Anaheim peppers, sweet paprika, onion and garlic powder, oregano and chopped cilantro, salt and pepper, this recipe is delicious and is sure to please everyone.
INGREDIENTS----------------
1 Lb. 80/20 ground beef
2 Roma tomatoes (diced)
2 dicedcAnaheim peppers (seeds and veins removed)
1/2 Diced onion
Chopped cilantro
2-3 large minced garlic cloves
1 tsp sweet paprika
1 tsp onion powder
1 tsp garlic powder
1/2 tsp ground cumin
1/2 tsp Mexican oregano
Salt to your liking
Pepper to your liking
Chopped lettuce
Freshly grated Colby Jack cheese (as needed)
diced tomatoes (for topping)
