8 MissionⓇ Gluten Free Tortillas:
2 boneless skinless chicken breasts (about 1 pound)
1 tablespoon vegetable oil
1 teaspoon salt
½ teaspoon black pepper
4 cups chopped romaine lettuce
1½ cups cherry tomatoes, halved
½ cup prepared gluten-free Caesar dressing
½ cup finely shredded Parmesan cheese (2 ounces)
Directions:
1. Prepare a hot grill fire or heat a grill pan over medium until hot. With a mallet or cast iron skillet, pound chicken breasts to ½” thickness. Rub with oil, salt, and pepper. Place on grill or in pan and cook, flipping once, until browned on both sides and cooked through, about 5 minutes per side. Internal temperature should be at least 165℉. Let cool slightly and thinly slice.
2. In a large, dry skillet over medium, heat tortillas 1 at a time, flipping once, until heated through and pliable. Transfer to a plate and warm remaining tortillas, stacking them on top of each other.
3. Serve chicken on tortillas with lettuce and tomatoes. Drizzle with dressing, and sprinkle with Parmesan.

Ingredients:
6 Mission® Carb Balance® Tortillas:
6 Boneless, skinless chicken thighs (about 1.5 lbs total)
1 tsp. Chili powder
1 Jalapeño, sliced
1 Avocado, mashed
Kosher salt to taste
Pomegranate (garnish)
Lime, optional
Instructions:
1. Heat grill. Season the chicken with the chili powder and ¾ tsp. salt. Grill the chicken, turning once, until the chicken is cooked through about 10 minutes.
2. Transfer the chicken to a plate to cool slightly. Cut chicken into cubes and top the tortillas with the chicken, mashed avocado and jalapeño slices.
3. Garnish with lime wedges and pomegranate.
Makes 6 Tacos

INGREDIENTS
1 bag Mission Strips Tortilla Chips:
1 chicken breast, cut into 1/2 inch strips
1 Tsp chili powder
½ Tsp cumin
½ Tsp onion powder
½ Tsp garlic powder
1 Tbsp cornstarch
2 Tbsp extra virgin olive oil
Lime juice
½ cup diced green pepper
¼ cup diced onion
¾ lb Monterey Jack cheese, shredded
¼ lb Fontina cheese, shredded
1¼ cup half-and-half
1 Tsp chili powder
¼ Tsp salt
¼ Tsp black pepper
Chopped cilantro
Chopped tomatoes
Chopped jalapenos
INSTRUCTIONS
Step 1
To cook the chicken: In a large resealable plastic bag, combine all dry ingredients for chicken, add the oil, mix and add the sliced chicken breast. Seal and refrigerate for 15 minutes to an hour (begin queso while chicken is marinating). Remove chicken from refrigerator. Heat 1 tbsp. olive oil in a large non-stick skillet. Empty contents of bag into the hot skillet and squeeze lime juice to taste. Cook until chicken is cooked all the way through (about 6 minutes). Remove chicken from skillet and set aside.
Step 2
To cook the queso: Heat the half-and-half over medium-high heat in a medium saucepan until simmering (do not boil, milk will foam around edges when ready). Once milk is ready, reduce heat to low and begin adding the cheese in batches while constantly stirring. Once cheese is melted, stir in all remaining ingredients other than garnishes. Stir to combine.
Step 3
Chop chicken into 1 inch cubes and add to queso. Stir to combine. Pour queso into large serving bowl and enjoy.
