3/4 c COCOA
1/2 ts BAKING SODA
1/2 ts SALT
1 c MELTED MARGARINE
4 ea EGGS
2 ts VANILLA
1 1/2 c MINT CHOCOLATE CHIPS (9oz.)
1 c CHOPPED WALNUTS
IN A LARGE BOWL MIX TOGETHER SUGAR, FLOUR, COCOA, BAKING SODA AND SALT. COMBINE MARGARINE, EGGS, AND VANILLA. COMBINE WITH FLOUR MIXTURE. FOLD IN CHIPS AND NUTS. TURN INTO A 9" X 13" GREASED BAKING PAN. BAKE AT 350 DEG F FOR 30 MINUTES. DO NOT OVER BAKE.

This week's tutorial is on a flavoursome chocolate brownie infused with fresh mint... because who doesn't love mint chocolate? A super quick and fun recipe with some fabulously tasty results. You can experiment with loads of different flavours in this recipe, add chopped pieces of your favourite nut or citrus zest (orange chocolate brownies are also a winner!). I made these for my dad for Father's Day and it reminded me that to gift something handmade AND EDIBLE is one of the best gifts of all! INGREDIENTS TO MAKE 15 (APPROX. - 8/20CM TIN)
200g dark chocolate (the higher cocoa content the better)
200g soft baking butter
3 large eggs
250g light soft brown sugar
100g plain flour
1 tsp baking powder
14g chopped mint leaves

INGREDIENTS
1 box brownie mix, plus ingredients called for on box
28 Andes candies, plus more for garnish
1/2 c. butter, softened
3 c. powdered sugar
1/2 tsp. mint extract
1/4 c. milk
3-4 drops green food coloring
1/2 c. mini chocolate chips
DIRECTIONS
1. Preheat oven to 350°. Line a 8-x-8” pan with parchment paper and grease with nonstick cooking spray.
2. Prepare brownie batter according to package instructions and pour into the prepared pan. Top brownie batter with an even layer of Andes candies. Bake until a toothpick inserted into the middle of a brownie comes out with only a few moist crumbs, about 45 minutes. Let cool completely.
3. Make frosting: In a large bowl using a hand mixer, beat butter until light and fluffy. Add powdered sugar, mint extract, milk and a few drops of food coloring. Beat until smooth, then fold in mini chocolate chips.
4. Spread frosting in an even, thick layer over the cooled brownies. Slice into squares. Top with chopped Andes candies.
