2/3 c Sugar 1/4 c Packed fresh mint leaves or 1 1/2 tb Dried mint 1/2 c Unsalted butter 4 oz Semisweet chocolate coarsely Chopped 2 lg Eggs lightly beaten 1 t Vanilla 2/3 c Flour 1/4 ts Salt 1 c Mint chocolate chips Grease and flour an 8x8 inch pan and preheat the oven to 325. Combine the sugar and mint in the bowl of a food processor until the mint is pulverized Set aside. Melt the butter in a 2 quart saucepan over very low heat. Turn off the heat and add the chocolate. Set aside for 5 minutes to melt. Whisk the chocolate to smooth then stir in the mint sugar. Whisk in the eggs and vanilla. Mix together the flour and salt then stir into the chocolate mixture until evenly blended. Fold in the mint chocolate chips. Scrape the batter into the prepared pan and bake for 35 minutes. When done the surface will be soft. Cool overnight on a rack before slicing. Mint Chocolate Brownies Tutorial
This week's tutorial is on a flavoursome chocolate brownie infused with fresh mint... because who doesn't love mint chocolate? A super quick and fun recipe with some fabulously tasty results. You can experiment with loads of different flavours in this recipe, add chopped pieces of your favourite nut or citrus zest (orange chocolate brownies are also a winner!). I made these for my dad for Father's Day and it reminded me that to gift something handmade AND EDIBLE is one of the best gifts of all! So next time you bake, have that special person in mind and remind them just how much you love them.
INGREDIENTS TO MAKE 15 (APPROX. - 8/20CM TIN) 200g dark chocolate (the higher cocoa content the better) 200g soft baking butter 3 large eggs 250g light soft brown sugar 100g plain flour 1 tsp baking powder 14g chopped mint leaves
