Mincemeat Cake Recipe Demonstration - Joyofbaking.com
Recipe here: Stephanie Jaworski of Joyofbaking.com demonstrates how to make a Mincemeat Cake. This Mincemeat Cake could be classified as a Quick Bread because of how it's mixed and that it is baked in a loaf pan. The batter is made by just mixing the dry ingredients together in one bowl, and the wet ingredients in another bowl. Then the two are combined and you are done. When you pull this Mincemeat Cake from the oven the crust is golden brown and delightfully crisp. But you will find that the crust softens when stored.

This lovely moist loaf cake, with lots of mincemeat as well as cherries and sultanas is so delicious. It is a great alternative to very rich Christmas cakes, with the same decadent flavours but a lighter texture. So easy to make too.
