How To make Mincemeat Cake
2 1/2 c Flour
2 ts Baking powder
1 ts Soda
1 ts Salt
1/2 ts Cloves
1/2 ts Nutmeg
1/2 ts Cinnamon
1/2 c Shortening
1 1/2 c Sugar
3 Eggs
1 c Milk
1 ts Vanilla
1 1/2 c Mincemeat
1 c Chopped nuts
CARAMEL FROSTING:
2 c Brown sugar
4 tb Butter
6 tb Shortening
1/2 ts Salt
1/2 c Milk
3 c Confectioners' sugar
Heat oven to 350 F. Grease and flour three 9-inch cake pans. Set aside. Sift together flour, baking powder, soda, salt, cloves, nutmeg and cinnamon; set aside. Cream shortening until light and fluffy. Slowly add sugar. Beat until creamy. Add eggs 1 at a time, blending after each addition. Combine milk and vanilla. By hand, stir into creamed mixture alternately with the dry ingredients, starting and ending with the dry. Blend thoroughly after each addition. Add mincemeat and nuts. Stir to blend. Pour into prepared pans. Bake at 350 F. for 35 minutes or until a toothpick inserted near center comes out clean. Remove from oven. Invert pans onto cooling racks. Leave for 10 minutes. Remove cake from pans; cool completely. Frost with caramel or your favorite frosting. To make caramel frosting: In a saucepan, combine brown sugar, butter, shortening and salt. Bring to boil, stirring constantly. Slowly add milk. Bring back to boil and cook 3 minutes. Cool slightly. Add confectioners' sugar. Beat until creamy and of spreading consistency. Sweet Short Crust Pastry Mincemeat Slice
How to Recipe Demonstration in the Bakery
Makes 20 slices
Recipe Ingredients:
White Flour 680g
Water 85g
Castor sugar 170g
Cake margarine 170g
White shortening 170g
Homemade or shop sweet mincemeat 1126g

Method:
1. Please remember to Subscribe to my channel it’s free
2. Sieve flour into a bowl
3. Add the fat into the flour
4. Now work the fat into the flour, now making a nice fine crumb
5. Now make a well in the middle
6. Now with a 2nd bowl add in water & mix in the caster sugar
7. Now add in the mixed water & sugar into to flour
8. Now mix lightly into a pastry, not bread dough
9. Now finish on the table
10. Now spilt into 2 parts, top and bottom shape into a ball
11. Now you need a baking tray 30 x 40cm with some baking paper { follow my video or bakers tip to save time Get 2 trays with baking paper on them } 1 is going to be the top and the other the bottom
12. Now roll out the pastry with rolling pin to about 3 - 4 mm onto the paper {top and bottom}
13. Now you are ready to dock the {top and bottom}
14. Now you can put your pastry onto the tray, just get a knife and cut off the edges of the pastry
15. Now pop the trays into the freezer for 10 min
16. Now fill up with homemade or bought sweet mincemeat 1126g spread out evenly
17. Now take your pastry top out of the freezer, and put on the top of mincemeat
18. Now you are ready for baking
19. Now bake at 380 - 400 f for about 25 -35 min
20. Well done bakers now you have baked the slice
21. Just one thing now pop some caster sugar on the tops
22. You will have to wait a good hour to cool down to cut them up
23. Now you can mark and cut them up, you will get 20 nice size slices out of the tray

Seriously though how have we not managed to get you a Mince Pie recipe in the 7 years we've been doing this??? Better later than never hey?! And to be honest its given us 7 years to perfect this Mince Pie recipe with its orange, spiced shortcrust pastry and home made mincemeat. To us, nothing says Christmas vibes better than a warm mince pie (and possibly a hot Mulled Wine ;) )

For the Orange and Spice Shortcrust Pastry:
Preheat Oven to 170C fan assisted (190C non fan)
225g Plain Flour
2 tbsp Icing Sugar
150g Cold Unsalted Butter
Pinch of Salt
3 tbsp ice-cold Water
Zest of 1/2 orange
1/2 tsp Cinnamon
For the Mince Pie Filling
125g Raisins
125g Sultanas
65g Candied Orange Peel
25g Stem Ginger
100g Bramley Apple
125g Suet
85g Demerara Sugar
25g Dark Muscovado Sugar
1/2 tsp Cinnamon
1/2 tsp Mixed Spice
110ml Brandy/Amaretto

Mincemeat cake recipe
Mincemeat cake recipe including sign language (BSL)
Vegetarian

Ingredients:
4oz softened butter, or margarine
4oz brown sugar
3 large eggs
12oz mincemeat
7oz self raising flour
Start the oven at 170c for the first 10 minutes of cooking, then lower the oven to 150c for an 1 hour.
After that hour test the cake by placing a skewer into the centre of the cake and should come out clean, if it's not put back into the oven around 5 to 10 minutes and just keep an eye on it.
In America if you can't get self raising flour you can use all purpose flour then you need to add 2 teaspoons of baking powder and 1/2 teaspoon salt to every cup of all purpose flour

Hi Neighbours, today I was blessed to be able to be with my Mother in-law and do some baking! I filmed her making her Christmas Fruit Cake. She is a wonderful lady and her Fruit Cake is so so good. I hope you enjoy the video and please consider subscribing, liking and sharing . Below is the recipe.

Easy Christmas Fruit Cake (this freezes very well)
preheat oven to 300 F or 149 C
2 1/2 cups of flour
1 tsp baking soda
2 large eggs, slightly beaten
1 can of sweetened condensed milk ( 300 mls or 10 oz can
3 cups of minced meat
1 cup of green cherries (glace red and green cherries, also she cut the red and green cherries in half and dusted them with flout)
1 cup of red cherries
1 cup of mixed candied fruit for fruit cakes
Butter angel food pan, line with parchment paper and butter paper.
my mother in-law added her red and green cherries ( she dusted the red and green cherries with some flour)
add two slightly beaten eggs.
Incorporate the flour a bit at a time.
Mix in your sweetened condensed milk
add another cup of flour and incorporate that
add your 1 cup of mixed fruit and mix through ( she dusted these with flour )
add your 3 cups of minced meat
add you last cup of flour
mix everything together really well
transfer to your baking pan
bake for 2 hours (my mother in-law used 3 small loaf pans and checked them at the hour mark but took 1 and half hours for hers to cook and when I make it took around the hour maybe 1 hour 5 minutes)
check cake to see if done with a toothpick through the center of cake see if it comes out clean. The cake was nice and light brown colour.
After cake is done she let it cool for a bit like 15 minutes
turned them out of pan transfer to baking rack let cool completely
soaked cheese cloth in few ounces of dark rum
wrapped the cake and store in cool dark place and in 3-4 weeks will resoak the cheese cloth in dark rum and rewrap until Christmas
when ready to serve you can put a nice cream cheese frosting on
