How to Bake a Milky Way Cake (step by step)
Recipe below!
ALMOST ELAINE’S MILKY WAY CAKE
* 2 ½ cups all-purpose flour
* ½ teaspoon baking soda
* Pinch salt
* ½ pound (2 sticks) butter
* 2 cups sugar
* 2 teaspoons vanilla
* 6 Milky Way bars (2.15 oz. each) or
7 Milky Way bars (1.86 oz. each
* 6 eggs at room temperature
* 1 cup buttermilk
* Milky Way Icing
Heat the oven to 300 degrees. Line the bottom a 9 ½- or 10-inch tube pan with baking parchment or waxed paper, and lightly grease the sides (unless you are using a non-stick pan). Set aside. Sift the flour with the soda and salt, and set the mixture aside.
Put half the butter in the large bowl of a stand-type mixer, and beat until light. Add the sugar, and keep beating until the mixture holds together; there’s too much sugar for it to really “cream”, but the smoother it is, the better. Beat in in the vanilla and turn off the mixer.
Combine the remaining butter with the Milky Ways in heavy saucepan, and cook over low heat, stirring constantly, just until the mixture is completely melted and smooth, a thick liquid. Turn off the heat.
Beat the eggs into the butter mixture one at time, then beat in a scant half of the dry ingredients. With the machine on, add the melted mixture as close as possible to all at once, aiming for the beaters as you do so.
When the candy is thoroughly blended in, add the remaining dry ingredients, then the buttermilk. Turn the batter into the pan, and bake for 1 hour and 25 minutes, or until a toothpick comes out clean.
Let the cake cool in the pan for about 10 minutes. Frost the cake only while the cake and the icing are still warm.
MILKY WAY ICING
* 8 tablespoons (1 stick) butter
* 6 Milky Way bars (1.86 oz. each)
* 1 tablespoon vanilla
* 1 cup sifted confectioners’ sugar
Melt the butter and candy together as described in the cake recipe, then beat in the vanilla and sugar, and spread while still warm and more or less pliable. Use as directed above.
