1 1/2 Pounds ground beef 3/4 Cup chopped onions 1/2 Cup bread crumbs 1 large egg 2 Tablespoons ketchup 2/3 Cup milk 1/8 Teaspoon paprika salt

to taste 1. Mix together the beef, onion, bread crumbs, beaten egg, ketchup, milk and seasonings. Press mixture into a 9-inch pie plate or similar microwave-safe dish. 2. Spread about 2 tablespoons ketchup or chili sauce evenly over top of meat. If your microwave has a temperature probe, insert it so tip is in center of food. Cover tightly with plastic wrap, arranging loosely around probe to vent. If not using a probe, cover tightly and then vent 1 edge slightly. 3. Microwave on medium high for 26-28 minutes, or until probe reaches 170 degrees. Let meat loaf stand for 10 minutes before serving.

Easy Meatloaf (Microwave)
1 pound lean ground beef. I used 90% lean 3 large eggs 2 cups seasoned croutons. I used parmesan garlic salad croutons
Mix all ingredients together until mixed well. Put in microwave safe bowl. Cook for 9 minutes. If there ends up being any liquid in it I just take the meatloaf out and discard the liquid part. Usually its completely ready to eat though. If you like more or less croutons you can add more or less.

Longaberger - Microwave Meatloaf with Kathy Eakle
MICROWAVE MEATLOAF 2 lbs. lean ground beef (93-94% Lean) 2 eggs 1 cup instant rice 1 cup oats 1 cup ketchup 1 small onion diced fine 1 green pepper chopped/small chunks 2 tablespoons (heaping) Southwest Seasoning Blend (Longaberger, of course) 1 tsp. salt 1 tsp. pepper 1 -- 8-in-1 Entertainer (Your choice of color) Mix all ingredients together well. Place in the bowl/lid of 8-in-1 Entertainer; pat down firmly until it fills in the bottom. Cover with tray (veggie server) -- flat side down. Cook in the Microwave for 15 to 20 minutes. Check for an internal temperature of 165 degrees or more. Remove the meatloaf by turning the bowl upside down on the tray. AWESOME!
