TACO STUFFED PASTA SHELLS // TONY'S KITCHEN

Ingredients:
12oz Barilla Jumbo Shell Pasta
1lb 80/20 ground beef
⅛ C Spiceology Achiote Blend
8oz Cream Cheese (room temperature)
1 16oz Bottle of La Victoria Chunky Salsa (or any chunk salsa in your cupboard)
¼ C of La Victoria Taco Sauce (or any red taco sauce)
2 C Grated Cheddar Cheese (or pepper jack is great too!)
Crushed Tortilla Chips (I prefer Josephina’s Tortilla Chip Brand)
Olive Oil
Procedure:
- Preheat the oven to 350F
- Boil jumbo pasta shells to al denta. Once al denta run the pasta under cold water to prevent pasta from continuing to cook itself. Toss in olive oil, set aside in a medium size bowl.
- In a medium size pan, cook your meat until brown. Once brown, drain far off of the meat in a colander. Add meat back to the pan with Achiote seasoning and cream cheese. Stir until cream cheese is completely melted into and seasoning is evenly distributed. Remove from heat
- In a 9x13 in a pyrex pan, cover the bottom with the chunky salsa, spread evenly
- Take each jumbo pasta shell and fill with a tablespoon of your meat sauce. Place each shell on top of the chunky salsa
- Once the pan is full of stuffed pasta, drizzle the taco sauce evenly over the pasta and cover them with shredded cheese then top with crushed tortilla chips
- Bake in the oven for 30 minutes. Serve immediately.

Cheesy Taco Stuffed Shells | Delish

INGREDIENTS
kosher salt
1 lb. jumbo shells
1 lb. ground beef
1/2 tsp. ground cumin
1 tsp. chili powder
1 c. fire-roasted tomatoes
1 c. shredded Cheddar
1 c. Shredded Monterey Jack
Freshly ground black pepper
1 jalapeño, finely chopped
1 tbsp. extra-virgin olive oil
1/2 large onion, chopped
2 cloves garlic, minced
2 tbsp. chopped fresh cilantro (plus more for garnish)
1 28-oz. can crushed tomatoes
Sour cream, for serving
Lime wedges, for serving
DIRECTIONS
1. Preheat oven to 350º.
2. In a large pot of salted boiling water, cook pasta according to package directions until al dente. Drain and return to pot.
3. Cook beef: In a large skillet over medium heat, add ground beef, cumin and chili powder and cook until beef is no longer pink. Drain fat, then return skillet to heat and stir in tomatoes, most of the cheddar (reserve some for topping) and most of the Monterey Jack (reserve some for topping). Season with salt and pepper. Cook, stirring often, until cheese has melted, then remove from heat.
4. Make sauce: In a medium sauce pan over medium heat, heat olive oil. Add onion and cook until tender, about 5 minutes. Add garlic and jalapeño and cook until fragrant, about 1 minute more. Add crushed tomatoes and season with salt and pepper. Bring mixture to a boil then reduce heat and simmer, 10 minutes. Stir in cilantro. [Editor's note: You can also skip making your own Alfredo sauce by using a jarred tomato sauce.]
5. Spoon a thin layer of sauce in the bottom of a large casserole dish. Stuff meatball mixture into shells and arrange stuffed shells on top of sauce, side by side. Spoon remaining sauce over shells and sprinkle with cheese.
6. Bake until cheesy is melted and bubbly, 18 to 20 minutes. Garnish with cilantro and serve with sour cream and lime wedges.

Taco Stuffed Shells
Are you looking for a fun dinner for taco night that is not only easy, but the family will be raving about time and time again? This taco stuffed shells recipe is the answer! Pasta meets tacos in this super easy weeknight dinner.
Recipe --
Ingredients
12 ounces jumbo pasta shells
1 pound ground beef
1 oz packet taco seasoning
⅔ cup water
1 ½ cups salsa divided
2 cups shredded Mexican cheese divided
Optional garnishes - Diced tomatoes, sour cream, diced onion, chopped cilantro etc.
Instructions
Preheat the oven to 350 degrees F. Spray baking dish with non-stick spray and set aside.
Cook the pasta shells according to directions on the box, drain and rinse under cool water.
Meanwhile in a skillet add the ground beef and cook until brown. Drain off grease.
Add the taco seasoning and water, stir and cook for about 5 minutes or until water is gone.
Stir in 1 cup salsa and 1 c. cheese to the taco meat and mix together.
Scoop a spoonful of meat mixture into each pasta shell and place the shells in the prepared baking dish.
Top with remaining salsa and cheese. Cover with aluminum foil and place in a preheated oven. Bake for 20-25 minutes or until heated through and the cheese is melted.
Notes
Swap beef for ground turkey – they both work great!
For spicy taco stuffed shells, use your favorite hot salsa or add some diced jalapenos when you brown the meat.
This is a great meal to make for friends and family who need a hot meal! Assemble it as instructed, cover it with foil, and refrigerate it. Add a note with the baking instructions so they can just pop it in the oven for an easy dinner.
