Today I am making one of my favorite macaroni salads. I found a Reddit post discussing the ingredients of L & L Hawaiian BBQ macaroni salad. I recreated it and adjusted the ratios. It came out delicious! This macaroni salad is great for parties or your next bbq.

12 oz (340 g) elbow macaroni
1 medium carrot (shredded)
1 1/2 Tbsp dehydrated onion
3 Tbsp pasta water (to rehydrate onion)
1 1/2 cup mayonnaise
1 Tbsp tuna
1/4 tsp white pepper
1/4 tsp msg
1/2 tsp sugar (optional)
salt to taste

Mexican street corn pasta salad recipe
8 oz cellentani pasta or rotini pasta
Vegetables
3 corn ears
2 TBSP olive oil
1/2 tsp salt, kosher
2 bell peppers (red and green)
1/4 large red onion
1/3 cup cilantro
Dressing
1/2 cup sour cream
1/2 cup mayonnaise
2 TBSP Lime juice
1 lime zest
1/2 cup cotija cheese
1 tsp salt, kosher + to taste at the end
Black ground pepper, to taste
Optional: Top with ground dry arbol chili or ground dry piquin chili.

1 15 oz. can black beans drained and rinsed
1 12 oz. bag frozen corn thawed
1 cup cherry tomatoes halved
1/2 cup cilantro chopped
1 cup lite mayonnaise
3/4 cup salsa canned or jarred
3-4 Tbsp. homemade taco seasoning, or 1 package of store bought taco

Mexican Macaroni Salad

Ingredients
Salad:
1 pound elbow macaroni
Vegetable oil, for oiling grill
2 ears corn
1 can black beans, drained and rinsed
1/2 cup finely chopped black olives
6 Roma tomatoes, chopped
3 green onions, thinly sliced
1/2 red onion, finely diced
Dressing:
1 cup jarred salsa
1 cup sour cream
1/4 cup mayonnaise
1/2 teaspoon cumin
Salt and freshly ground black pepper

Directions
For the salad: Cook the macaroni according to the package directions. Drain and set aside to cool.
Heat an indoor grill and brush with oil. Cook the ears of corn, turning, until browned and cooked through. Cut the kernels off the cobs.
Put the corn in a big bowl with the black beans, olives, tomatoes, green onions and red onions and toss to combine.
For the dressing: In a separate bowl, whisk together the salsa, sour cream, mayonnaise, cumin and salt and pepper to taste. Pour over the salad ingredients and fold together until everything is coated. Taste and adjust the seasoning.
Serve chilled.
