How To make Mexican Goulash

beef, ground, lean

cup
onion, chopped
1/4
cup
bell pepper, green, chopped
3
cup
tomato juice, no salt
1 1/2
cup
macaroni, uncooked
1/4
teaspoon
garlic powder
1/4
teaspoon
pepper
1/4
teaspoon
chili powder
Directions:
Add macaroni to boiling water and cook for 7 minutes. Cook the first 3 ingredients in cast-iron skillet until meat is brown and vegetables are tender. Drain off fat. Add tomato juice, macaroni, and spices. Simmer until liquid is almost absorbed.
Note: Served with a salad, this makes a delicious meal.

Old Fashioned Beef Goulash | I Heart Recipes
Hey everybody! Today we are going to make some good Old Fashioned Beef Goulash:
This simple homemade Old Fashioned Beef Goulash is made with ground beef, corn, and more! It'll warm you up and keep you full for those long winter nights! And it’s very budget-friendly.
My beef goulash recipe has beef and rich tomato paste, along with tender onions, corn, and peas & carrots. It simmers low and slow, making it rich, satisfying, and perfect as a hearty dinner. Make a larger batch of this old fashioned goulash recipe for next-day leftovers and somehow, it's even better!

0:10 - Add ground beef to a pan.
0:15 - Brown the beef.
0:18 - Drain excess fat.
0:20 - Sprinkle with seasonings.
0:28 - Add chopped onions.
0:34 - Toss the ingredients together.
0:40 - Add frozen mixed vegetables.
0:45 - Mix well.
0:48 - Add minced garlic.
0:55 - Add tomato paste.
0:59 - Add Worcestershire sauce.
1:05 - Add diced tomatoes.
1:11 - Mix well.
1:13 - Add bay leaves.
1:19 - Pour in chicken broth.
1:22 - Add uncooked elbow macaroni pasta.
1:26 - Fold in the pasta.
1:35 - Cover and cook for 10 minutes.
1:40 - Give it a quick stir.
1:46 - Add shredded cheese.
1:53 - Add parsley flakes.
2:00 - Cover and cook until pasta is tender.
2:05 - Fold in the cheese.
2:12 - Garnish with more parsley flakes.

SAUCE
+ 4 tomatoes

+ 1 serrano pepper

+ 2 spoons chicken bouillon

Mexican Garden Goulash
By the time July rolls around, we try to eat from the garden as much as possible, starting with new potatoes and green beans. Once the tomatoes and peppers start ripening, many more possibilities open up. Yesterday was Greek garden salad, today is Mexican garden stew.
Here is the recipe:
Cook 3/4 - 1 pound of hamburger with a chopped onion.
Add a chopped large sweet pepper and one jalapeño.
Cook for about 5 minutes, then add:
3 large tomatoes, scalded, peeled and chopped
1 -2 ears of sweet corn (cut off the cob) or 1 cup corn.
1 small summer squash or zucchini, chopped (optional)
seasonings:
1/2 tsp salt
1 T. either fajita seasoning, taco seasoning OR chili powder
1-2 tsp. lemon or lime juice (optional)
chopped fresh basil (1/4 cup) or 1 T. fresh oregano (opt)
Cook for about 15 minutes, until the tomatoes have fallen apart and the vegetables are tender.
