1. Shredded Beef Tacos: a traditional New Mexican dish consisting of a small, corn or wheat tortilla filled with various ingredients, such as meat, cheese, vegetables, and salsa.
2. Shredded beef: beef that has been cooked until it is tender and then shredded into small pieces.
3. Filling: the ingredients used to stuff a taco, such as meat, cheese, vegetables, and salsa.
4. Corn tortilla: a small, thin, circular flatbread made from cornmeal that is used to make tacos and other New Mexican dishes.
5. Wheat tortilla: a small, thin, circular flatbread made from wheat flour that is used to make tacos and other New Mexican dishes.
6. Meat: Fresh roast beef.

Shredded Beef Tacos Recipe
Ingredients:
4 lbs. beef (chuck roast or round steak)
2 tablespoons olive oil
2 onions, diced
4 cloves garlic, minced
1 teaspoon salt
1/2 teaspoon black pepper
4 cup water
12 small corn or wheat tortillas
1 cup shredded cheese (cheddar or Mexican blend)
1 cup chopped veggies (lettuce, tomato, avocado, etc.)
1 cup salsa
Optional ingredients:
2 teaspoons ground cumin
2 teaspoons chili powder
2 teaspoons paprika
1 teaspoon dried oregano
Instructions:
1. Preheat oven to 300°F.
2. Heat olive oil in a large Dutch oven over medium-high heat.
3. Sear the beef on all sides until browned, about 3-4 minutes per side.
4. Remove the beef from the pot and set aside.
5. Add the onion and garlic to the pot and cook until softened, about 5 minutes.
6. Add the salt, and pepper, and cook for 1-2 minutes. Optional add in the following ingredients cumin, chili powder, paprika, oregano.
7. Pour in the water and stir to combine.
8. Place the beef back into the pot, cover it with a lid, and transfer to the oven.
9. Bake for 3 hours or until the beef is tender and shreds easily with a fork.
10. Remove the pot from the oven and shred the beef with two forks.
11. To assemble the tacos, warm the tortillas, place a few tablespoons of the shredded beef on each tortilla, sprinkle with cheese on top and put back into the oven to get the cheese to melt. Then take out and let rest for 10 minute's to cool down.
12. Now add your veggies, and salsa.
Serve hot and enjoy!
