Chicken fajita is a classic Mexican recipe made of juicy chicken, onions and bell peppers.
Chicken Fajitas Recipe:
2.5lb chicken breast
Chicken Marinade:
1 tsp chili powder
1 tsp paprika
1 tsp garlic powder
1tsp onion powder
1 tsp dry oregano
1 tsp ground cumin
Black pepper
1 tbsp salt
Vegetable oil
Juice of ½ lime
1 onion
3 bell peppers (red, green, yellow)

easy chicken marinade!
Easy chicken marinade ????
Marinade:
2 sliced jalapeño
1/3 cup extra virgin olive oil
2 tbs cumin
1 tbs smoked paprika
1 tsp oregano
4 cloves minced garlic
Zest of 1-2 limes
3 tbs lime juice
Big pinch of salt and pepper
This marinade will literally work amazing with Steak, chicken thighs or chicken breasts!
Add 2-3lbs of meat of choice to a gallon bag along with your marinade!
Let sit for at least 2-3 hours or overnight in the fridge!
These work amazing on the grill or even just as easy to cook up in a pan! I like the crispness an air fryer brings so I threw mine in at 390° for about 6 minutes, then flipped for another 6 or until internal temp hits about 160°
Avocado corn salsa: (that I can literally put on anything)!
1 cup cherry tomatoes quartered
1 roasted cobb of corn kernels
1 cubed avocado
1/2 cup minced onion
3/4 cup rinsed black beans
Big handful of chopped cilantro
2 limes juiced
Salt and pepper to taste
Makes 4 servings:
P: 4 Ch: 19 F: 6
Or approx 127 kcals per serving
I Love to throw all this on top of some rice! Such an easy dinner or healthy meal prep!
Those tortilla strips, I just sliced thin strips of flour tortillas and tossed in a little avocado oil, garlic powder, salt and pepper.
Then air fried for a couple minutes at 390°

Mexican Chicken--One Pot Wonder
A one pot meal of chicken breast, black beans, corn, salsa, and fresh cilantro. Fast, healthy, and delicious!
PRINTABLE RECIPE:
INGREDIENTS USED:
4-5 chicken breasts
1 tablespoon olive oil
1 teaspoon chili powder
1 teaspoon paprika
1/2 teaspoon cumin
2 teaspoons salt (1 tsp over chicken, 1 tsp in meal)
1/2 teaspoon black pepper
16 ounces salsa (I used Pace Restaurant Style)
1 can black beans, strained & rinsed
1 can corn, strained
1 bunch fresh cilantro, finely chopped
1/2 cup shredded cheese (Monterey Jack or Mexican)
DIRECTIONS:
1. Heat large skillet over medium heat, then add olive oil and chicken.
2. Sprinkle with all the spices and cook about 4-5 minutes on each side, leaving the center a little pink.
3. Add remaining ingredients and get the salsa bubbling.
4. Cook 2-3 minutes until chicken is cooked through.
5. Sprinkle with cheese and fresh cilantro. Eat on a plate, or wrap it in a tortilla with sour cream.

????If you love using poblanos, You'll love this chimichanga casserole recipe
Bake temp: 380 Degrees (F)
Bake time: 25 minutes
Broil on HIGH the last 3 minutes
Ingredients
1.5 pounds pre-cooked shredded chicken (I used 4 thighs)
5-7 poblano peppers + one poblano for topping
6 Yellow corn tortillas
2 1/2 cooked rice (I used Calrose)
2 1/2 cups heavy cream
3/4 cup water (to blend roasted chilis)
2 cups freshly shredded mozzarella (or Oaxaca- manchego)
1/2 cup cotija cheese or parmesan
1/2 finely chopped onion (use a grater : )
3 finely chopped garlic cloves
1/2 bunch of cilantro (50 stems :)
2 Tbs butter
1 1/2 Tbsp chicken bouillon (adjust to taste)
1/2 tsp black pepper
Tip
-The layering used in this recipe was done 2x (including the tortillas 6 total)
-If you have a plethora of poblanos you can always add more to this recipe : )
-Taste best with yellow corn tortillas
-If you have fresh chicken broth use 3/4 to blend with poblanos for best flavor
-Save 2 cups of creamy poblano sauce as mentioned in the video
-This recipe is great for later use and frozen
*If frozen Thaw out fully
*Cover with a foil
*Bake at 380 Degrees for 35 minutes
*remove foil and continue baking for an additional 10 to 15 minutes

INGREDIENTS
1 1/2 to 2 lbs (680 g to 907 g) bone in chicken (seasoned to preference)
1 cup (160 g) long grain rice (rinsed and dried)
2 cups (473 ml) water
1 Tbsp chicken bouillon powder (10 g) (or 1 Knorr brand chicken bouillon cube)
1/2 cup to 2/3 cup (118 ml to 157 ml) crushed tomato (or tomato sauce)
1/2 tsp (1 g) onion powder
1/2 tsp (1 g) garlic powder
1/4 tsp (.5 g) ground cumin
1/4 tsp (.5 g) black pepper
2 cloves garlic minced (13 g)
1 small to medium-sized onion (175 g)
RUB SEASONING
1 tsp (3 g) season all seasoning salt
1/2 tsp (1 g) onion powder
1/2 tsp (1 g) garlic powder
1/2 tsp (1 g) lemon pepper

Macros per serving (total 4)
430 Calories | 41g Protein | 42g Carbs | 11g Fat
Ingredients (for 4 servings)
- 700g Raw Cubed Chicken Breast
- 1 tbps Oregano
- 1 tbsp Cumin
- 1 tbsp Paprika
- 1 tsp Chilli Powder
- 1 tbsp Garlic Powder
- 1 tsp Salt
- 1 tsp Olive Oil
- 1/2 Lemon Juice
Cook on high heat for 3-4 mins each side till golden brown
- Shredded Lettuce
- Chopped Tomatoes
- Garnish Coriander (optional)
Garlic Sauce
- 150g Fat Free Greek Yogurt (any yogurt works)
- 50g Light Mayo
- 2 Minced Garlic Cloves
- Chopped Coriander/Cilantro
- 1/2 tsp Cumin, Salt, Pepper
- 1/2 Lemon Juice
You can store this sauce for multiple days in a bottle or container, perfect to prep in batches
Golden Rice
- Basmati Rice (207g uncooked gives about 560g cooked weight | 140g Cooked Rice per serving)
- season with Turmeric, Cumin, Paprika, Garlic, Salt
- Add water then bring to a boil then simmer on low heat for 8-10 mins till fully cooked
Distribute into 4 equal servings and enjoy!

Important notes
- When reheating the meal prep, i would put the sauce and lettuce seperately then heat the rice and chicken in a microwave
- You can store the sauces in little containers in the meal prep box
