How To make Merry Cherry Chocolate Cupcakes
1 pk Cream cheese, softened (8oz)
1 pk Confectioners' sugar (16 oz)
1 cn Maraschino cherries, drained
-(6 oz) 2 c PLANTERS Pecan Halves
24 Prepared chocolate cupcakes,
-cooled (2 1/2") In medium bowl, with electric mixer at medium speed, beat cream cheese until smooth. Slowly add confectioners' sugar, beating until smooth and creamy. Reserve 12 whole cherries; coarsely chop remaining cherries. Reserve 1 cup (about 72) pecan halves; coarsely chop remaining pecan halves.
In small bowl, combine 3/4 cup cream cheese frosting, chopped pecans and chopped cherries. Using the end of a wooden spoon, poke a 1" deep hole in top of each cupcake. Spoon about 1 tablespoonful pecan filling in each hole. Frost the tops of the cupcakes with remaining frosting. Halve reserved cherries. Top cupcakes with cherry halves and reserved pecan halves. Refrigerate until serving time.

2 cups cake flour
2 cups white sugar
1/2 cup cocoa powder, I used Bensdorp
2 tsp baking powder
1 1/2 tsp baking soda
1 tsp salt
1 cup hot water
1 cup buttermilk
1/2 cup vegetable oil
2 tsp vanilla
1 tsp coffee powder
2 large eggs
For Frosting
2 cups of whip paste, I used whippit
2 tbsp of cold water or evaporated milk
1 tbsp silver dragees for toppings
Yields 36 cupcakes

How To Make Chocolate Cupcakes
How to make a very easy chocolate cupcake recipe that tastes fluffy yet moist! This recipe is one of Nigella's awesome recipes - not mine, and it's delicious.

Ingredients: Makes 12 cup cakes
150g self-raising Flour
125g Butter unsalted
150g caster sugar
100g dark Chocolate
300g cherry Jam
2 large Eggs lightly beaten
Pinch of salt
Icing
100g Dark chocolate
100ml ½ cup double Cream
Pre heat oven to gas 4 / 180 c
Muffin tin and cases
Heat the butter in a saucepan, when it has almost all melted turn the heat off and add the chocolate. Stir until the chocolate has melted. Then add the jam, eggs, sugar and salt. Beat with a spoon until all mixed together, then sift in the flour and fold altogether. Spoon mixture into the muffin cases until they are about half full. Pop straight into the oven for 20 -25 minutes.
To test if they are ready they should be springy when you touch them, they bounce back when you push the top. Or you can poke a thin skewer into the cake and if it comes out clean, without any gooey mixture on then they are ready.
Leave them to cool on a wire rack then make the icing!
Icing
Break the dark chocolate into a saucepan; add the cream the heat gently stirring all the time until it starts to go shiny and thick. Take off the heat then spread the icing on top of your cakes and decorate away!
