How To make Merry Mallow Fudgies
1 Colored mini marshmallow
2 1/2 c Flour
2/3 c Cocoa
1 ts Baking soda
1 ts Salt
1 c Sugar
1/2 c Brown sugar
1 c Shortening
2 Eggs
1 ts Vanilla
To begin, place a bag of minature colored marshmallows into the freezer about an hour before baking. Sift together and set aside; flour, cocoa, baking soda, salt. Cream together sugar, brown sugar, shortening, eggs and vanilla. Once you have creamed the above ingredients together begin to add the dry ingred. Once the dough is mixed, remove the marshmallows from the freezer and place in a bowl along with another bowl filled with sugar. Take a small amount of dough and place a marshmallow in the center( roll into a ball). Roll the ball in the bowl of sugar and place on greased cookie sheet( if you use the teflon you don't need to grease). Bake 5 to 7 min at 350~F. You need to watch them carefully. The minute you see a single cookie crack, pull them all from the oven. Let them cool some before you remove from sheet. makes about 4 doz. -----

21 grams unflavored gelatin (3 packs) I use knox gelatin powder, you can use agar agar to make them vegan but it won't have the same texture.
4 ounces (1/2 cup) (113 g) cold water (for the gelatin)
6 ounces (3/4 cup) (170 g) corn syrup (or honey, golden syrup or maple syrup)
2 ounces (1/4 cup) (56 g) honey (or corn syrup)
12 ounces (2 cups) (340 g) granulated sugar
4 ounces (1/2 cup) (113 g) water (for the sugar syrup)
1/4 teaspoon salt
1 whole vanilla bean or 2 teaspoons vanilla extract
4 ounces (1/2 cup) (113 g) canola oil (for brushing utensils)
4 ounces (1/4 cup) (113 g) powdered sugar (for dusting)

If you’ve ever had a marshmallow brownie I bet you’re hitting the Print Recipe button right now because they are GOOD! A rich chocolate brownie is topped with MOUNDS of marshmallowy fluff (you have to make your own, it’s easy and so tasty) then drizzled with more chocolate. I did a swirl but some people literally flood the top with ganache, there is no wrong way to go here. Anyhow You’re probably going to ant to double the batch as people will ask you to bring these to work/school/their house.
I like a MOUNTAIN of fluff on my brownie but you can halve that part of the recipe for a less extravagant dessert.
