How To make Memphis Style Sweet Sauce For Ribs
8 oz Tomato Sauce
1/2 c Spicy Honey Mustard
1 c Catsup
1 c Red Wine Vinegar
c Water 1/4 c Worcestershire; smoked
1/4 c Worcestershire Sauce;regular
1/4 c Oil
2 tb Tabasco Sauce
1 tb Lemon Juice
2 tb Brown Sugar
1 tb Paprika; Hungarian, mild
1 tb Seasoned Salt
1 1/2 tb Garlic Powder; or 5 cloves
-fresh garlic, minced fine 1/8 ts Chili Powder
1/8 ts Anaheim Chili/cayenne
1/8 ts White Pepper
Black Pepper; freshly ground 1/8 ts Numex Chili Powder
1 Neem leaf; crushed or Bay
: Combine ingredients in a large heavy weight Dutch oven. Bring to a boil, reduce heat and simmer 30 minutes, stirring occasionally. : I like to serve this sauce at the table and not baste the ribs with it while they are on the grill. If you paint this sauce on while the ribs are hot but off from the fire they will glaze and very slightly brown. Baste the ribs with this marinade only during the last half hour of cooking, to glaze the ribs and make them slightly brown... If this sauce is put on the ribs too early the sugar will blacken the outside of the ribs and be unpleasant looking but not bad tasting.... The goal is NOT to blacken the outside of the ribs at all, so I usually serve the sauce at the table near the ribs..... Enjoy this sauce. Grammie's Memphis BBQ Sauce Recipe - Glen And Friends Cooking
Today we're making an old Southern cooking BBQ sauce from my relatives in Memphis Tennessee. This is a recipe that made it's way North in the 1960s and my Mom would make it every year. This year I finally did some digging to find the original.
Grammie's Memphis BBQ Sauce
¼ gallon vinegar (I QT )
7.5 cups ketchup
2.5 ounces Worcestershire Sauce
1.5 cups white sugar
½ Tablespoon dry mustard
2 teaspoon red pepper
3 cloves garlic - JUST CRUSHED
I large onion, cut up
I lemon cut up
½ Tablespoon rounded chili powder
Cook very slowly 4 hours. Cool. Strain.
Glen's Mom's Version:
1 - 7Lb tin ketchup
5 lemons
16 cups vinegar
⅛ cup dry mustard
1 Tablespoon cayene pepper
2 ½ Tablespoons chili powder
5 large lemons
7 cups sugar
7-8 garlic pods
1 small battle Worcestershire
Cook for about 4 hours.

Memphis Dry Rub - BBQ Rub Recipes #1
Pigskin Barbeque Presents.....
Our version of Memphis Style BBQ Rub which can be used on ribs, butts, and even brisket!
It has many of the Memphis staples when it comes to rubs and seasonings, like paprika, cayenne, dry mustard and so on. Here is our recipe!
This recipe makes enough for 3 racks of baby back ribs or 2 racks pork of spareribs.
Some products may not be in your local store so links are included.
1/4 cup Sweet Paprika
4 1/2 teaspoons Ground Black Pepper
4 1/2 teaspoons Dark Brown Sugar
1 tablespoon Kosher Salt
1 1/2 teaspoons Celery Salt -
1 1/2 teaspoons Cayenne Pepper
1 1/2 teaspoons Garlic Powder
1 1/2 teaspoons Dry Ground Mustard -
1 1/2 teaspoons Ground Cumin -
1 teaspoon Ground Ginger -
Mix well and shake on meat at least 2 hours before cooking.
