How To make Mediterranean Pasta (Woman's Day Pasta Cookbook)
8 oz Vermicelli or thin spaghetti
2 Boneless, skinless, chicken
Breast halves, cut into 1/2- By 1-1/2-inch strips Salt Ground pepper 4 Bacon slices, diced
1 cn (14-1/2-oz.) pasta-style
Chunky tomatoes 1 cn (15-oz.) tomato sauce
1/2 ts Dried rosemary leaves,
Crushed 1 pk (9-oz.) frozen artichoke
Hearts, thawed 1/2 c Ripe pitted olives, sliced
Lengthwise Crumbled feta cheese, Optional Chopped parsley, optional Cook pasta according to package directions; drain and keep warm. Season chicken with salt and pepper to taste. In medium-sized skillet over medium-high heat, cook bacon 5 minutes or until almost crisp; add chicken. Cook chicken 5 minutes or until browned on all sides, stirring often; drain. Stir in tomatoes, tomato sauce and rosemary; reduce heat to medium. Cook, uncovered, 15 minutes, stirring occasionally. Add artichoke hearts and olives; heat through. Just before serving, spoon sauce over hot pasta. Garnish with feta cheese and chopped parsley. PER SERVING: About 419 cal, 35 g pro, 47 g car, 11g fat, 23% cal from fat, 71 mg chol, 940 mg sod.
NOTE: To prepare pasta ahead, cook, rinse well and drain. Cover and refrigerate. To reheat before serving, dip pasta into boiling water for no longer than 1 minute or sprinkle with water and heat in microwave on High for about 1-1/2 minutes. SOURCE: "Woman's Day Pasta Cookbook"

Capellini with Tomatoes and Basil

Level: Easy
Yield: 6 servings
Ingredients
Kosher salt
1/2 cup good olive oil, plus extra for the pot
2 tablespoons minced garlic (6 cloves)
4 pints small cherry tomatoes or grape tomoatoes
18 large basil leaves, julienned
2 tablespoons chopped fresh curly parsley
2 teaspoons chopped fresh thyme leaves
1 teaspoon freshly ground black pepper
1/2 teaspoon crushed red pepper flakes
3/4 pound dried capellini or angel hair pasta
1 1/2 cups freshly grated Parmesan cheese
Extra chopped basil and grated Parmesan, for serving
Directions
Bring a large pot of water to a boil and add 2 tablespoons of salt and a splash of oil to the pot.
Meanwhile, heat the 1/2 cup of olive oil in a large (12-inch) saute pan. Add the garlic to the oil and cook over medium heat for 30 seconds. Add the tomatoes, basil, parsley, thyme, 2 teaspoons salt, the pepper, and red pepper flakes. Reduce the heat to medium-low and cook for 5 to 7 minutes, tossing occasionally, until the tomatoes begin to soften but don't break up.
While the tomatoes are cooking, add the capellini to the pot of boiling water and cook for 2 minutes, or according to the directions on the package. Drain the pasta, reserving some of the pasta water.
Place the pasta in a large serving bowl, add the tomatoes and Parmesan and toss well. Add some of the pasta water if the pasta seems too dry. Serve large bowls of pasta with extra basil sprinkled on top and a big bowl of extra Parmesan on the side.

Pasta Salad by Chef Bae
Check out this super easy and flavorful pasta recipe made by Sherri Chef Bae Smith:
1 pound Rotini pasta, multicolored
3 cups cherry tomatoes,halfed
1/4 cup red onion, diced
1/2 cup broccoli, sliced
1/2 cup cucumbers, diced
1/2 cup kalamata(black)olives,sliced
1/4 cup carrot,sliced
1 green bell pepper, diced
1 red bell pepper, diced
1 yellow bell pepper, diced
1 bottle of Wishbone Italian Dressing
1 teaspoon salt
1/2 teaspoon pepper
2-3 pinches red pepper flakes (optional)
Boil the pasta according to the directions on the package. Allow to pasta to cool.(You can run cold water over pasta to help it cool faster.)
In a bowl, add and mix all the ingredients together. Refrigerate before serving. *In my opinion it taste the best the next day bc everything has marinated over night*

Lunch at home is always freshly cooked from delicious local ingredients.
Traditional lunch will be lots of vegetables, some proteins like meat or fish. For meat it’s likely to be lean versions like veal, beef..
Nothing will be cooked using butter. Only olive oil.
No one will spread butter on a piece of bread. Italians never do this.
No one will be mixing olive oil with balsamic vinegar and dipping the bread into this mix - it is not Italian habit. Most probably this thing was invented by tourists.
???????? Lunch out is a different story - here Italians might have pasta or some other delicious food offered by the restaurant.

6 - Have a strict schedule for your food consumption and don’t eat in between. Feel hungry, take a fruit, vegetable or some nuts
7 - Cut off your alcohol consumption
Yes, Italians really don’t drink much. A few glasses of wine with their dinner and that’s it!
8 - Food is not a fuel - it’s a pleasure. Slow down and enjoy every single bite… every single sip of it.
