Ingredients
* 2 garlic cloves
* 1 teaspoon ground oregano
* 1 tablespoon ground cumin
* ¼ teaspoon cayenne pepper (optional)
* 2 tablespoons chili powder
* 2 pounds ground beef
* One 8-ounce can tomato sauce
* 1 teaspoon salt
* ¼ cup masa (corn flour, found in Mexican food section of many supermarkets)
* Optional Ingredients:
* 1 can pinto beans, drained
* 1 can kidney beans, drained
* 1 jalapeño, seeded and finely diced
* 1 can diced tomatoes and chilies (I use the Rotel brand)
* For Serving:
* Shredded cheddar cheese
* Chopped onion
* Fritos
Instructions
1. Begin by measuring the spices: chopped garlic, oregano, cumin, cayenne, and chili powder.
2. Place the ground beef in a large pot and throw in the garlic. Cook the beef until brown
3. And unless you want to tick off your cardiologist, drain off the excess fat.
4. Pour in the tomato sauce. Followed by the spices and the salt
5. Stir together well, cover, and reduce the heat to low. Cover the pot and simmer for 1 hour, stirring occasionally. If the mixture becomes overly dry, add in ½ cup water at a time as needed.
6. After an hour, place the masa in a small bowl. Add ½ cup water and stir together with a fork.
7. Dump the masa mixture into the chili.
8. Stir together well. Taste, adjust the seasonings and add more masa paste and/or water to get the chili to your preferred consistency, or to add more corn flavor. Add the beans, jalapeño, and tomatoes if desired. Simmer for 10 minutes.
9. Serve with shredded cheddar, chopped onion, and Fritos.

Now chili is a really complex recipe, there are a billion and one ways to make it and this is just ONE way, and the key to an award winning chili at home is to make it your own. That’s the key to any award winning recipe.
In this recipe we’re using
3 ½ lbs ground beef
½ onion
3 garlic cloves
4 tbs chili powder 3 Fiesta / 1 Gephart
2 tsp smoked paprika
¼ cup tomato paste
1 bell pepper
2 tsp cumin
½ tsp oregano
1 tsp cayenne pepper
1 TBS OG - add to taste at end
1 TBS WOW -add to taste at the end
3 Roma tomatoes
We’re also adding
Mirepiox
(thats ½ chopped onion, ¼ cup chopped carrots, ¼ cup chopped celery)
2 TSP Better than Bouillon or use beef broth in place of water
2 TBS masarina or flour to thicken if necessary or desired
Condiments at my house
Onions
cheese
Salsa verde to taste
Chili piquin to taste
Habanero to taste
Beans of your choice, yes i said beans haha
Now here is the biggest pro tip that the chili champs use – brown your meat over high heat before adding it to the dish. This will take your recipe to a whole other level of flavor nirvana.

The Pioneer Woman Chili
This hearty chili recipe from The Pioneer Woman has a perfect blend of seasonings, ground beef, and beans. This is Stove Top, Crock Pot, and Instant Pot friendly! It will quickly become your best chili recipe!
Ingredients:
2 lbs. ground beef 80% lean
2 cloves garlic diced
8 oz. tomato sauce
2 tablespoons chili powder
1 teaspoon ground cumin
1 teaspoon ground oregano
1 teaspoon salt
1/4 teaspoon cayenne pepper
1/4 cup masa harina white or yellow
15 oz. kidney beans drained and rinsed
15 oz. pinto beans drained and rinsed
Garnish Options:
Shredded Cheddar
Lime Wedges
Sour Cream
Tortilla Chips or Fritos
Diced Green Onions

Stove Top Method-
Cook and crumble the ground beef in a large pot over medium heat until browned.
Drain excess grease.
Add the garlic and tomato sauce, cook for 1 minute.
Add seasonings: 2 TBS Chili Powder, 1 tsp cumin, 1 tsp oregano, 1 teaspoon salt, ¼ tsp cayenne pepper.
Stir to combine. Decrease heat to low.
Cover and let simmer for 1 hour, stirring occasionally.
Note: If the meat seems too dry after an hour, add water ½ cup of water.
Combine the masa harina with ½ cup water in a small bowl. Stir to combine. Add to the chili.
Add more masa and/or water until preferred consistency is obtained.
Add the drained and rinsed beans. Simmer for 10 minutes.
Serve with desired garnishes and enjoy!

Crock Pot Method-
Cook and crumble the ground beef in a large pot (or stove-top safe crock pot) over medium heat until browned.
Drain excess grease.
Add the garlic and tomato sauce, cook for an additional minute.
Add seasonings: 2 TBS Chili Powder, 1 tsp cumin, 1 tsp oregano, 1 teaspoon salt, ¼ tsp cayenne pepper.
Stir to combine. Transfer to the Crock Pot.
Combine the masa harina with ½ cup water in a small bowl. Stir to combine.
Stir in the masa mixture into the Crock Pot. Add the beans and stir gently to combine.
Heat on low for 4 hours, or all day!
Note: At any point you can add more masa and/or water until preferred consistency is obtained.

Instant Pot Method-
Set the Instant Pot to Sauté mode. Cook and crumble the ground beef until browned. Drain excess grease.
Add the garlic and tomato sauce, cook for an additional minute.
Add seasonings: 2 TBS Chili Powder, 1 tsp cumin, 1 tsp oregano, 1 teaspoon salt, ¼ tsp cayenne pepper.
Combine the masa harina with ½ cup water in a small bowl. Stir to combine.
Add the masa mixture and the kidney/pinto beans to the Crock Pot and stir gently to combine.
Optional: Add additional water and/or masa mixture to achieve preferred consistency.
Close the lid and ensure the pressure valve is shut. Set the Instant Pot to the Chili/Beans setting and heat for 20 minutes.
Flip the quick release valve or let the steam escape naturally. Serve with preferred garnishes!
