How To make Meatballs Extraordinaire
4 pounds ground beef (use very lean)
1 egg
slightly beaten
1 large onion :
grated
Salt to taste 1 (12 oz.) bot chili sauce
1 (12 oz.) jar grape jelly
Juice of 1 lemon
Blend together meat, egg, onion, salt. Form into 100 small meatballs. Cook until well browned; drain off any extra fat.
Combine chili sauce, jelly, and lemon juice. Pour over meatballs and simmer in skillet until heated through. (I use a crockpot until serving time on low heat.) Serve in heated chafing dish. Great appetizers!

Boulette
(Haitian Meatballs)
2 lbs of ground beef
4 slices of white bread
8 ritz crackers
1 egg
1 cup of milk
1/8 tablespoon of salt
Pepper to taste
1 small onion (grated)
1 small bell pepper (diced)
1 lime
1 habanero pepper
1 tablespoon of Épis
1 tablespoon of dry ÉPIS seasoning
(Can be replaced with adobo)
1 cup of flour
2 cups of oil for frying

Ingredients
1 lb. ground beef
3 big potatoes cut into big cubes. ( choose potato that’s hold it is shape in cooking)
1 one medium onion chopped
2-3 Tbsp. tomato paste
2-3 tsp. curry powder
1/4 -1/2 tsp. red chili pepper
Salt and black pepper to taste
1/2-q cup green peas (optional)
Cooking oil
Boiling water or broth

Steps-
-Mix ground meat, 1/2 tsp salt, 1/2 tsp black pepper and 1/2 tsp 7 spices ( I didn't add it ) . All the spices and salt are to your taste.
-Make meatballs and brown them from all sides over medium heat. You can make the stew in the same pan just get rid of the excess oil then add the chopped onion.
-Or in a medium pot add some new oil about 3 tbsp. then add onion and potato and let them fry for a few minutes or till the onion is slightly brown.
-Add all the spices and salt and cook for a few minutes then add hot water or beef or chicken stock and bring to boil. (if you like your stew to be thick then don't add a lot of liquid )
-Add tomato paste once the liquid comes to boil and mix well then cover and cook over low-medium heat.
-When the potato is 3/4 cooked add the peas. At this point check for salt and spices then cover and cook until the potato is fully cooked and the stew is thickened to your liking.
-Leave the stew for about 15 minutes before serving so all the flavor develop richer.
-Serve with white rice or white rice cooked with vermicelli link below.
