How To make Meatball Kraut Skillet
1 egg white
whipped
1/4 c skim milk
3 c white bread crumbs
1/2 tsp black pepper
1 lb ground chicken breast, skinless
1/2 tbsp olive oil
27 ozs sauerkraut, canned :
drained
1/2 c onions -- chopped
3/4 c long-grain rice -- uncooked
1 1/2 c water
14 1/2 ozs crushed tomatoes
In a mixing bowl, combine egg white, milk, bread crumbs, salt, and black pepper. Add chicken and mix well. Shape into 12 meatballs. In a skillet, heat oil over medium heat. Add meatballs and cook until no pink remains in chicken. Remove meatballs from skillet. In same skillet, combine sauerkraut and onions. Stir in rice and water. Add balls and crushed tomatoes. Bring to a boil. Reduce heat and simmer, covered for 30 minutes or until rice is done.

Easy One Day Sauerkraut Recipe | A Simple Same Day Quick Kraut | OKTOBERFEST SERIES EP. 2

1 Med. Cabbage Head sliced
1 1/4c. Apple Cider Vinegar
1/2 c. Apple Cider
1 t. Caraway Seed
1 t. Mustard Seed
1/2 c. Water
2T Sea Salt (Kosher Salt)
1T Brown Sugar
~Salt sliced Cabbage in a bowl. Mix and breakdown sliced cabbage with hands.
~Set aside for 15 minutes.
~Combine all other ingredients in sauce pan and bring to a low boil.
~Once ingredients are at a low boil, add cabbage and all of its brine to it in the sauce pan.
~Cook for 15-20 minutes or until cabbage becomes translucent.
~Strain and allow to cool.
~Get some mustard and Enjoy on your favorite Beer Brats!

Ingredients
Meatballs
• 3 Tablespoons Olive Oil
• 1 lb. Ground Beef, 85% lean
• ½ Yellow Onion, finely diced
• ¼ cup Breadcrumbs, Plain or Italian
• 2 cloves Garlic, minced
• 1 large Egg
• 2 Tablespoon Ketchup
• 1 teaspoon Yellow Mustard
• 1 teaspoon Worcestershire Sauce
• ½ teaspoon Salt
• ¼ teaspoon Pepper
• 2 teaspoons Fresh Parsley, roughly chopped
Gravy
• 1 medium Yellow Onion, sliced into ½ inch strings
• 1 Tablespoon Unsalted Butter
• 1 cup Chicken Broth
• 1 cup Beef Broth
• 1 teaspoon Onion Powder
• ½ teaspoon Garlic Powder
• 1 ½ teaspoons Worcestershire Sauce
• 2-3 drops Kitchen Bouquet browning and seasoning sauce, optional
• 1/4 cup cold water + 3 tablespoons Corn Starch
Instructions
Brown the Meatballs
1. Set olive oil aside and gently mix remaining meatball ingredients in a large bowl until just combined, don’t overmix or the meat will become tough. Roll into 1+1/2 inch meatballs.
2. Heat olive oil in a large nonstick skillet over medium heat. Brown 5-6 meatballs at a time for about 2 minutes on each side. (Leave extra room around each so that you can easily roll them over to cook on the reverse side.) Remove and set aside on a plate. Repeat for all meatballs.
3. Reduce heat to medium. Add any oil/drippings from the meatball plate back to the pan and melt a Tablespoon of butter. Add the sliced onions and let them soften and even caramelize a bit, about 15 minutes. Stir often.
Prepare the Gravy
1. Add the chicken broth, beef broth, onion powder, garlic powder, and Worcestershire sauce to the skillet. Stir to combine.
2. Use a silicone spatula to work any brown bits on the bottom of the pan into the sauce. If a darker color is desired, add 2-3 drops of Kitchen Bouquet browning and seasoning sauce.
3. Combine the cold water and corn starch in a small Tupperware with a lid. Shake to combine.
4. Bring gravy to a boil. Whisk in cornstarch mixture. Decrease to medium low. Continue to whisk to ensure that it blends in smoothly.
Add the Meatballs
1. Add the meatballs back to the skillet and heat for about 10 minutes to allow the meatballs to finish cooking through. Garnish with parsley and serve over mashed potatoes.

Deep Fried Sauerkraut Balls! (Great Party Snack)
Drain two 14 oz. cans of sauerkraut and run it through the grinder.
Makes about 2 cups of ground sauerkraut.
Grind up 2 cups of fully cooked honey baked ham.
Mix the ham and the sauerkraut together and add 1 cup of
regular bread crumbs.
Form the mixture into (golf ball size balls) and put them in the freezer for 1 to 1 & 1/2 hours.
Remove the sauerkraut balls from the freezer about 5 minutes
before cooking so they start to thaw and the flour will stick to them real good.
In 3 different dishes put your breading coatings...
Roll your sauerkraut balls in all purpose flour,
then in egg wash, then in bread crumbs.
Deep fry for 1 minute and 20 seconds in 350 degree oil.
Cool to warm on paper towels and serve with homemade
cocktail sauce.
Cocktail sauce recipe!
1/2 cup of ketchup
1/2 tsp. lemon juice
1 tsp. Worcestershire Sauce
1 Heaping tsp. of prepared horseradish.
Mix well...
