How To make Meat Loaf Tropicale
1 1/2 lb Lean Ground Beef
1 ea Egg; Lg
1 c Bananas; Ripe, Mashed, 2 Lg
1/2 c Oats; Quick Cooking
1/2 c Green Bell Pepper; Chopped
2 tb Onion; Chopped
1 ts Salt
1 ts Mustard; Prepared
1/4 ts Nutmeg
1/8 ts Allspice
2 ea Slices Bacon
3 tb Orange Marmalade
Heat the oven to 350 degrees F. Mix all of the ingredients, except the bacon and marmalade, together. Spread the mixture in an ungreased loaf pan, 9 X 5 X 3-inches. Crisscross the bacon slices on the top of
the meat mixture and spread the marmalade over the whole thing. Bake, uncovered for 1 to 1 1/4 hours. Drain off the excess fat and let stand for 5 to 10 minutes before slicing. NOTE: The bananas add a unique, almost mysterious flavor and a special moistness to this elegant meat loaf. -----

Meatloaf a lo Boricua /Rollo de Carne / My Puerto Rican Meatloaf/ Relleno de Plátanos Maduros

Ingredients:
2 1/4 lb de Carne Molida (2 1/4 lb of ground beef)
2 lascas de Chorizo or 3/4 tz taza de chorizo
2 chorizo link or 3/4 tz of chorizo
3/4 cup pan rallado con sabor ( 3/4 tz of seasoning breadcrumbs)
1 1/2 cdas de sazon tropical or adobo (2 tbsp of tropical sazon or adobo)
1 cdta de pimienta blanca molida ( 1 tsp of ground white pepper)
1 cda de cebolla en polvo (1 tsp of onion powder)
1 cdta de paprika ahumada ( 1 tsp of smoke paprika)
3 1/2 oz de leche mas arriba de 1/3 de taza
3 1/2 oz of milk
4 cucharadas de ketchup (4 tbsp of ketchup)
1/4 tz de perejil fresco
1/2 cebolla mediana y 1/2 pimiento picados
1 shallots or 1/2 white onion and 1/2 of peppers
Salsa (sauce)
1/2 tz de ketchup (1/2 cup of ketchup)
1 tz de BBq de se preferencia ( 1 cup of BBQ sauce of your preference)
2 cdta de mostaza de dijon (2 tbs of dijon mustard)
sasonador italiano ( italian seesoning)
paprika
2 a 3 cucharada de salsa inglesa (2 to 3 tbs of Worcestershire sauce )

INGREDIENTS
1-2 lbs meat of choice .. you can use ground chicken. beef. or turkey
* used 3 lbs which can serve 6-7 people .. keep in mind meatloaf is great for leftovers such as sandwiches etc.. this also freeze well, just wrap in seran wrap and freeze*
3 slices bread
1 cup milk
eggs * 1 egg per lb of meat used *
desire amount chopped bell pepper and onion ( I used about 1/2 each*)
3 tbs wortchesire sauce
3 tbs onion and garlic powder
1 tbs salt
2 tbs beef bouillon ( or 2 packs onion soup mix )
1/2 cup bbq sauce ( or desire amount )
To make the glaze *This is to taste so please adjust to your liking *
1 cup ketchup
1/3 cup brown sugar
1/2 cup bbq sauce
3 tbs wortceshire sauce
Rustic Stuffed Meatloaf
Growing up I always looked forward to meatloaf night.The only problem was that my mothers version of meatloaf was ground beef, mixed with breadcrumbs and not much else. It was bland, but as a kid if I used enough ketchup, I loved it.
But now as an adult, I realize that meatloaf can and should be so much more.
So I decided to revisit the meatloaf of my mother and make it mine. About the only thing that I kept from her old recipe is the ground beef. But I replaced the usual ground beef with 100% pastured ground beef from my friends at KOL Foods. (
This is comfort food at its best. Perfect for the family and trust me, your kids will not be smothering this meatloaf in ketchup the way I used to.
