Meatloaf Recipe
1lb 85/15 Ground Beef
1lb Italian Sausage
2 Cups Italian Bread crumbs
1/2 Cup Grated Parmesan Cheese
2 Eggs
1/2 Cup Milk
1/3 Cup BBQ Sauce
3 Cloves Garlic Minced
1 Small Onion Finely Diced
1 TBPS Creole Seasoning
1 TBSP Black Pepper
1 TBSP Oregano
BBQ Glaze
3/4 Cup BBQ Sauce
2 TBSP Honey
1 Tsp Garlic Powder
1 Tsp Onion Powder
2 TBSP Apple Cider Vinegar
Preheat Oven to 375 degrees. Cook for 40 mins remove and apply glaze. Cook for an additional 20 Mins and allow to rest for 10 mins. Enjoy!

Ingredients for the meat dough:
500 g. chopped beef
120-140 g. of chopped Mortadella
4-5 slices of sandwich bread
3 tablespoon of milk
a handful of parsley
4 garlic cloves
2 tablespoons of grated Parmesan cheese
3 eggs (both white and yolk)
1 1/2 teaspoons of salt
1 teaspoon of grated nutmeg
one cup of bread crumbs
Extra virgin olive oil
Preparation of the meat dough:
First of all, in a food processor, chop garlic, parsley and Mortadella.
(Or by hand on a chopping board)
Put into the bowl of a mixer: the ground beef, eggs, salt, nutmeg,
parmesan, bread (soaked in milk and then squeezed)
and the chopped garlic, parsley and mortadella.
Activate at low or medium speed for the time necessary
for the complete mixing of the ingredients.
(Or you can mix by hand: Arrange the minced meat on a large plate
and add, regardless of the order, all the ingredients,
mixing and mashing with a (strong) fork).
Hint: If the dough is too soft, it can harden by resting in the fridge,
or with a little more bread crumbs.
Cooking the meatloaf:
Make the dough in a oblong shape.
Start breading it in breadcrumbs, even the ends,
be careful to mantein the shape.
Heat 2 mm of olive oil in a suitable non-stick pan.
Place the meatloaf
With two wooden or steel large paddles
(already wet with oil to prevent from sticking the meat)
turn the meatloaf sideway, from time to time.
Be careful that one side does not take too much color.
It must be golden brown.
This phase lasts 5-10 min.
When you have completed turning, and the crust has formed
all over the meatloaf, add a little white wine to deglaze.
Then cover with an overturned saucepan and low the fire.
Continue like this, stirring occasionally and adding a little wine
when needed.
The cooking in this phase last about 45 min.
To check that it is cooked: no juice should come
out when slighty pressed.

FOR THE MEATLOAF:
1 1/2 pounds (680 g) ground beef , pork, chicken or turkey
1/2 cup (54 g) bread crumbs or panko bread crumbs
1 large egg
2 tablespoons (30 g) fresh chopped parsley
1/2 cup diced onion , about 1/4 medium onion
2 cloves garlic , minced
1 Tablespoon (15 ml) Worcestershire sauce
1/2 teaspoon (2.5 ml) ground mustard powder
1 teaspoon (5 ml) kosher salt , or to taste
1/2 teaspoon (2.5 ml) fresh cracked black pepper
1/4 cup (60 g) ketchup or tomato sauce
1/4 cup (60 ml) milk
SAUCE
1/2 cup (120 g) ketchup
2 Tablespoons (30 ml) bbq sauce
2 Tablespoons (30 ml) apple cider vinegar
1 Tablespoon (15 ml) brown sugar
1/2 teaspoon (2.5 ml) smoked paprika powder
1/4 teaspoon (1.25 ml) chipotle powder (optional, will make the sauce spicy

OLD SCHOOL MEATLOAF!!
This recipe for my MEATLOAF will be the most moist flavorful one you ever tasted
It's because I soak my bread in the milk and then mix it in gently
Recipe
2# ground beef
1/2 cup diced onions(cooked)
1/2 cup diced celery (cooked)
1/2 cup ketchup
2 tablespoons Worcestershire sauce
1 tablespoons salt and pepper
2 whole eggs
1/4 cup whole milk
1 cup diced bread(soaked in milk)
GLAZE recipe
1 cup ketchup
1/4 cup light brown sugar
2 tablespoon Worcestershire sauce
Mixed together in bowl
Soak bread in the milk
Add to all other ingredients and gently mix together
Shape in loaf on greased baking sheet(or loaf pan) and cook for 20 minutes on 350 degrees
Take out and pour glaze on top and cook an additional 20 minutes or until fully cooked
ENJOY with mashed potatoes or cold on a sandwich

In this video I show you my favorite way of preparing and cooking a meatloaf for the best results. Meatloaf can be a boring food to cook and there are plenty of bad meatloaf's out there but this is not one of them.
