Homemade Cake Mix, Red Velvet Cake Mix, Brownies
When you want a cake or brownies but don't want to worry about measuring flour, sugar, and salt, all you need to do is pull out the homemade cake mix, or brownie mix, add a few ingredients, and you will have a cake batter or brownie whipped up in no time at all. It's simple, easy, and quick to do. It's ready when you are.
Now, I will be storing my cake yellow cake mix in the fridge, but you can store it on the shelf up to a month, because of the butter I used. If you use shortening, you can just store it on the shelf. Below I am listing the ingredients for the cake mixes and I will add the directions to bake the cakes or brownies.

Yellow Cake Mix
10 cups self-rising or all-purpose flour
6 cups sugar
1 1/3 tsp salt
1 cup cutter or shortening
5 1/2 tsp baking powder, if using all-purpose flour
To make cake you will need:
4 cups cake mix
3 eggs
2 tsp vanilla
1/4 cup butter, softened
1 cup milk
Place mix in a bowl. Add eggs, vanilla, butter, and milk. Beat mixture just until well combined. Pour into greased and floured pan. Bake 20-25 minutes for 8 or 9 pans or 30-35 minutes for 9X13 pan. Cool and frost as desired.
variations:
spice cake: add 1 tsp cinnamon, 1/2 tsp allspice, 1/4 tsp cloves
orange cake: add 1 tsp orange zest, 1/2 tsp orange extract, no vanilla
lemon cake: add 1 tsp lemon zest, 1/2 tsp lemon extract, no vanilla
chocolate cake: add 2 Tbsp milk, 2 squares melted chocolate, 3 Tbsp cocoa powder.
Brownie Mix
1 cup self-rising or all-purpose flour
1 cup cocoa powder
2 cups sugar
1/2 tsp salt
1 1/2 tsp baking powder, if using all-purpose flour
To make brownies you will need:
4 eggs, room temperature
1 cup butter, melted
1 tsp vanilla
Brownie mix
Preheat oven to 350 degrees. Add 1 batch brownie mix to a large bowl. Add eggs, butter, and vanilla. Stir well to combine. Pour into a greased 9X13 pan. Bake 28-32 minutes or until center is set. Cool before cutting into bars.
To make brownies for an 8X8 or 9X9, use 1 3/4 cup plus 2 Tbsp brownie mix, 2 eggs, 1/2 cup melted butter, and 1/2 tsp vanilla. Bake as directed above.
Red Velvet Cake Mix
2 1/2 cups self-rising flour or all-purpose flour
1/4 cup cocoa powder
1 tsp salt
2 cups sugar
1 tsp baking soda, if using all-purpose flour
2 tsp baking powder, if using all-purpose flour
To make cake you will need:
2 large eggs
1 3/4 oil
1 cup buttermilk
1 tsp vanilla
1 bottle red food coloring
Pour mix into a large bowl. Add remaining ingredients. Stir well. Pour into prepared pan. Bake 40 minutes or until toothpick in center comes out clean. Frost as desired.

Sunken Cherry-Apple Presidents' Cake and Lunar Year of the Dog Longevity Noodle Stir-Fry
Whole plant based, oilfree and vegan for your Presidents' weekend and start of the Chinese Lunar New Year of the Dog:
1) Sunken Apple-Cherry Cake Recipe:
Use silicon form or grease your baking sheetform with avocado and dust with flour. Mix 600 g whole wheat pastry flour, 1 inch of salt, 1/2 tsp baking powder, 1 packet of vegan Dr. Oetker (or other) vanilla pudding mix, 240 g sugar (I use vegan sugar/Florida Chrystals), 3 cups of unsweetended apple sauce, 200 g almond flour, 2 tbsp cinnamon, 320 ml soymilk or other plant milk. Pour the dough into your baking sheet. Turn on oven to 360 F. Peel, quarter and de-core about 5-6 tard apples and mix them in some lemon or orange juice to prevent decoloring. Cut little cuts like a fan into every quarter but don't cut all the way through. Press the apples lightly into the dough and fill half of the sheet for President Lincoln who loved apples. Then open a can of organic tart cherries in water (not in heavy syrup!), drain them and put them on the other half of the dough in the sheet for President Washington whose favorite fruit were cherries. Bake the cake about 40 - 45 minutes at 360 F. Take cake out and powder a little bit with confectionary sugar (again, I have a vegan version of that). Enjoy with a dollup of soy vanilla ice cream and a cup of coffee! Happy Presidents' Day!
2) Lunar New Year of the Dog Longevity Noodle Stir-Fry Recipe:
Soak authentic vermicelli style rice noodles for 7 minutes in boiling hot water. Heat a wok or skillet and water sautee in vegetable broth (1 cup all in all but start with 1/4 cup and add until the end as needed), a packet of asian style stir fry vegetables until thawed and heated. Add 1 cup of julienned carrots, 1 garic cloved crussed. The white chopped part of 6-8 leaves of baby bok choy, 2 spring onions chopped, 1/2 cup zucchini sliced or zoodles, 1/4 cup chopped cilantro, 1/4 cup chopped basil, 1tbsp soy sauce, 1/4 tsp salt, 1/4 tsp chili pepper, 2 tbsp toasted sesame seeds, 1 tsp Chinese Five Spice, 1tsp potato or tapioca starch, mix with wooden spoon and keep stir frying. Drain noodles and pour them into the stir-fry and mix. Add another 1 tbsp soy sauce and add spices to your liking. Also add 1/2 squeezed lemon. Fill a bowl with your stir-fry, add some of the green bok choi leaves and some mung sprouts on top. Put a 1/4 slice lemon on the bowl. Long noodles give luck in the Chinese New Lunar Year of the Dog! Gung Hay Fat Choy! Enjoy!
