Chewy Oatmeal Cookies.
These iced oatmeal cookies have soft centers, crisp chewy edges, cozy spice flavor, and are topped with icing that sets after a couple hours. Pulsing the oats before adding to the cookie dough will give you a compact and uniform textured cookie.
Prep time: 15 minutes
Chill time: 45 minutes
Bake time: 12 minutes
Total time: 1 hour 12 minutes
Yield: 14 cookies

✨Ingredients✨
For The Cookies:
80 g (1 cups) rolled oats
125 g (1 cups) all-purpose flour
1/2 teaspoon baking soda
1/2 teaspoon salt
1 ground cinnamon
1/4 teaspoon ground nutmeg
1 teaspoon grounded ginger
115 g (1/2 cup) unsalted butter, soft
100 g (1/2 cup) packed light or dark brown sugar
50 g (1/4 cup) granulated sugar
1 large eggs, at room temperature
1/2 Tablespoon maple syrup or molasses
For Icing:
1 and 1/2 cups (180g) sifted powdered sugar
1.5 – 2 Tablespoons milk
????????Instructions:
✅ In a large bowl using a rubber spatula mix the butter, brown sugar, and granulated sugar together until creamed, about 2 minutes. Add the eggs, maple syrup until combined, about 1 minute.
✅ Pulse the oats in a food processor 10-12 times until you have a variety of texture– chopped oats with some oat flour. See video. Add to the wet ingredients.
✅ Sift in flour, baking soda, salt, ginger, cinnamon, and nutmeg. Mix to combine. Dough will be thick and sticky.
✅Cover and chill the dough for at least 45 minutes in the refrigerator (and up to 4 days). If chilling for longer than a few hours, allow to sit at room temperature for at least 30 minutes before scooping and baking because the dough will be quite hard.
✅Scoop about 1.5 Tablespoons of dough per cookie, and place 3 inches apart on the baking sheets.
????Preheat oven to 350°F (177°C). MODE: Upper and Lower heat. Bake for 11-12 minutes or until lightly browned on the sides. The centers will look very soft.
✅Allow cookies to cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely before icing.
✅Make the icing: Place sifted powdered sugar in a medium bowl. Add 1 Tablespoon of milk. Use a fork to whisk until combined. It will be impossible to fully combine because this isn’t enough liquid. Add only enough extra milk to make a very very thick icing. I only add about 1 more Tablespoon of milk. Lightly dip the tops of the cookies into the icing. Icing will set after a few hours, so you can stack and gift the cookies.
❗️Measurements Note: All recipes have been developed using weight measurements. Although US volume measurements have been included for your convenience, it is highly encouraged that you weigh your ingredients using a kitchen scale to get the best possible results. Due to the sensitive nature of baking, kitchen scales are proven to yield more accurate and consistent results than measuring cups. Enjoy!

OATMEAL COOKIE RECIPE
Ingredients
¾ Cup | 170g Butter
¾ Cup | 150g Brown Sugar
½ Cup | 60g Granulated Sugar
1 Egg
1 Teaspoon | 5ml Vanilla
½ Teaspoon Cinnamon (optional)
1⅓ Cup | 170g Flour
¾ Teaspoon | 3g Baking Soda
½ Teaspoon Salt
1½ Cups | 135g Oats
¾ Cup | 130g Chocolate Chips
Instructions
In a large bowl cream together the room temperature butter and both sugars until light and pale.
Add the egg, vanilla and cinnamon if using and beat until well combined.
Sieve the flour, baking soda, and salt into the bowl and pour in the oats.
Mix together the dough until just combined before adding the chocolate chips / raisins / nuts.
Roll the cookie dough out into balls, about 1-2 tablespoons worth and place on a cookie sheet.
Bake in a 180C | 375 F oven for about 10 minutes or until the edges start to brown.
Cool for a few minutes before transferring to a wire rack.
Notes
Swap the chocolate chips out for raisins or nuts
The cinnamon is optional - I like to use it only when making the cookies with raisins

Maple Oatmeal Raisin Cookies A Sugar Free and Gluten Free Cookie Recipe! | Healthy Cookie Recipes
We love recipes that are delicious and healthy at the same time, and these oatmeal raisin cookies with maple syrup sweetener are just the thing for a tasty, hearty dessert. This recipe can easily be altered to make it a delicious gluten free and refined sugar free option.

Here's the recipe:
1 1/2 cups melted butter
1 1/2 cups pure maple syrup
4 eggs
2 teaspoons vanilla extract
3 cups all purpose flour (or GF all purpose flour)
1 teaspoon salt
2 teaspoons ground cinnamon
2 teaspoons baking soda
6 cups rolled oats (or GF oats)
2 cups raisins
Combine all ingredients in bowl. Drop dough balls onto baking sheet.
Bake at 350°f for 10-12 minutes. Makes around 4 1/2 dozen cookies. Enjoy!
